泰式青咖哩鸡


那天和安哥宋吃泰餐时,吃不到这道料理,
心里的思念终于憋不住了;
于是老规矩,
开锅咯!
My hubby and I wanted to have Thai Green Curry Chicken the other day, but sadly the restaurant we went to couldn't serve it. So I thought, why not give it a try at home?


辛香的香茅,青辣椒,疯柑;
香甜的九层塔,薄荷;
浓浓的椰浆;
与一番咖哩有别的绿色卖相;
诱惑十足,
The fragrant lemongrass, green chilies and citrus, mixed with the sweet and delicious basil and mint, complimented with the thick coconut milk. This uniquely green curry will have you craving more with each bite!

青咖哩 + 芒果卡拉布 = 迪马克 (赞)!

略嫌油腻的青咖哩,配上略酸的芒果卡拉布,
有着互补的作用,
彼此相添美味的效果,
叫人欲罢不能
The slightly oily Green Curry served with the slightly sour Mango Kerapu can make a scrumptious meal.


材料:
(A)  8汤匙青咖哩糊
       300毫升浓椰浆
       200毫升淡椰浆
       30克九层塔

(B)   600克鸡肉,去皮斩块
        50克小番茄,
        2粒圆茄子,切块
        2条青和红辣椒,切块
        3片疯柑叶

       调味料 :
       2汤匙鱼露
       2汤匙糖
       少许的盐

做法:
1。  将浓椰浆倒入锅内,煮至出油,加入青咖哩糊炒香。



2。  调入(B)料煮熟,倒入淡椰浆,九层塔和调味料。


 3。   待稍微滚,即可上桌。

小贴士 :
1。为了减轻准备功夫,青咖哩糊可以提早准备。

青咖哩糊材料:
15条指天椒,6条青辣椒,3支香茅,30克芫茜根,
150克葱头仔,80克蒜头,3片蓝姜,1寸黄姜,
100克九层塔叶,50克薄荷叶,5片疯柑叶,2粒疯柑皮,
1汤匙芫茜籽粉,1茶匙小茴香籽,1汤匙烤香马来栈,1茶匙黑胡椒粒。

青咖哩糊材料
 将全部材料放入搅拌机内搅至幼滑即可。
