此红宝石非一般宝石。它乃泰国闻名的甜品,泰语为Tub Tim Krob。

顾名思义,称之红宝石。
这道甜品是用去皮后的马蹄切成小块,再染上紅色,
接者用木薯粉轻轻裹上一层,放入水中煮熟后捞起并放入冰水中冷却,
接着放到碗里,把熬煮的浓稠椰漿淋上去,加入冰塊就完成啦。
我以鲜红的甜菜根汁取代人造红色素。

红宝石
材料:
马蹄/荸薺 350克,约15粒
甜菜根 250克(加150毫升水搅拌成汁待用)
木薯粉 30克
菠萝蜜 200克
大粒沙谷米 20克 (煮至透明沥干待用)
糖(做成糖浆)100克糖 + 150毫升水
椰浆 250毫升
做法:
1。将甜菜根去皮切块,加150毫升水以搅拌机搅匀后过滤备用。
2。将马蹄去皮洗净后切成小粒,然后倒入刚才准备好的甜菜根汁中浸泡过夜至染色。
3。 第二天,菠萝蜜 切片待用。 沙谷米煮至透明沥干待用。 糖和水,小火煮溶成糖浆。
3。 将马蹄从甜菜根汁倒出沥干,放入装有木薯粉的盘子,捞一捞让红色马蹄都裹上木薯粉。
4。锅内倒入清水煮沸,水沸腾后轻轻放入裹着木薯粉的马蹄粒煮滚,当马蹄粒都浮在水面后,捞起放入冷水(这样子才会QQ哦!)。
5。准备一个小碗,放入红宝石,一些透明沙谷米,一些菠萝蜜,淋上椰浆,还有适量的糖浆就成了。可以加些冰块,冰凉的甜品最美味!

浸过马蹄的甜菜根汁,丢之可惜,可以用来做糕点,比如: 甜菜根红龟糕。
Red Ruby (Tub Tim Krob)
Ingredients:
15 (350g) water chestnuts
250g beetroot (Blend with 150ml water to get the juice)
30g tapioca flour
200g jackfruit (slices)
20g sago
Some sugar syrup (100g sugar + 150ml water)
250ml coconut milk
Method:
1) Skin the beetroot and dice it, then blend it with 150ml of water in a blender. Sieve and set aside for later use.
2) Skin the water chestnut and cut into small pieces. Immerse them in the beetroot juice overnight until they are dyed red.
3) The next day, cut the jackfruit into small pieces. Cook the sago until translucent and drain. Cook the sugar and water over a low flame to make syrup.
4) Drain the water chestnut from the beetroot juice and place them in a bowl containing the tapioca flour. Mix them well to ensure the water chestnut is covered in tapioca flour.
5) Boil some water in a wok. Carefully place the tapioca covered water chestnuts into the water to cook until they float on the surface of the water. Quickly transfer them to a pot of cold water to make them chewy.
6) Place some of the red rubies in a small bowl together with some sago and jackfruits, ladle in some coconut milk and syrup and serve. Can be served with ice too.
Tips sharing :
After soaking the water chestnuts, the beetroot juice can be use for making kuih ,bread or cake. For example : Beetroot Ang Ku Kuih.
