Nigella的天天布朗尼(Nigella's Everyday Brownies)



布朗尼含有大量的奶油,糖和巧克力,是美国人最爱吃的高热量甜点。
因为身披一身黑鲁鲁的巧克力色,而顾名思义为布朗尼(Brownies)


如果想瘦身或保健的,这甜点也只能蜻蜓点水,略尝一,两口好了。
反之,欲想放纵自己,偶尔减压,
那这款浓郁巧克力的甜点,肯定是你的首先。


想要做出好吃的布朗尼,就必须暂时把卡路里的问题,抛诸脑后。
因为糖和油的分量不能少,否则烤出来的布朗尼会又干又硬;
那跟湿润香醇是永远搭不上关系咯!


Nigella的天天布朗尼
食谱参考 : Cook.Bake.Love
7" x7" 方形烤盘

材料:
无盐奶油 75克
黄糖 70克 (嗜甜的可以增加到100克)
普通面粉 75克
无糖可可粉 30克
苏打粉 ½ 茶匙
盐 1/8茶匙
鸡蛋 2颗
香草精 ½ 茶匙
巧克力豆/切碎巧克力90克


做法:
1)预热烤箱180C,烤盘铺上烤盘纸或锡箔纸。
2)用一个中等锅小火溶化奶油,加入黄糖搅拌至糖溶化,离火。
3)筛入混合均匀的粉类,拌均(此时面糊会很干)。
4)另外一个小碗里,鸡蛋和香草精拌均,加入面糊拌均。
5)加入巧克力豆/切碎巧克力,马上倒入烤盘,用刮刀抹平表面,180C烤18分钟 (视个人烤箱而定,我用180C烤10分钟,转170C烤5分钟再转160度烤3分钟)。






Nigella’s Everyday Brownies
Recipe adapted from :  Cook.Bake.Love  
(7”x7” square baking tin)

Ingredients:
75g unsalted butter
70g light brown sugar (use up to 100g if you have sweet tooth)
75g plain flour
30g cocoa powder
½ tsp baking soda
1/8 tsp salt
2 eggs
½ tsp vanilla extract
90g chocolate chips/chopped milk chocolate


Method:
1) Preheat the oven to 180C. Line baking pan with baking paper or aluminum foil.
2) Melt the butter over a gentle heat in a medium-sized saucepan. When it's melted, add the sugar, stirring with a wooden spoon (still over a low heat) to help it blend with the melted butter.
3) Whisk together the cocoa powder, flour, baking soda and pinch of salt, and then stir into the pan; when mixed (this will be a very dry mixture, and not wholly blended at this stage), remove from the heat (I remove from heat in step 2).
4) In a bowl or jug, whisk the eggs with the vanilla extract and then mix into the brownie mixture in the pan.
5) Stir in the chopped chocolate and quickly pour and scrape into baking pan, spreading the mixture with a spatula, and cook in the preheated oven 180C for about 18 minutes (I baked at 180C for the first 10 mins, switched to 170C for 5 mins and 160C for the last 3 mins). It will look set, dark and dry on top, but when you feel the surface, you will sense it is still wobbly underneath and a cake tester will come out gungy. This is desirable.

  21. Aunty Young, I hv made that day but its not as moist as yours, the brownies was quite dry I would say, do u know what was going wrong? All the ingrediens I follow the same...

      Sorry to hear that your brownie was quite dry. It may be due to 2 possibilities. One is over mixing the mixture. You can try to be faster but more gentle. Another possibility is the oven temperature that's too high. You can try reducing your oven temperature to 170°C (because sometimes different ovens may have a few degrees' difference).
