鱼头米粉 (Fish Head Bee Hoon/Rice Vermicelli)


鱼头米粉,安哥的最爱。
从亲民的咖啡店小档,到高档的餐馆,
逢人推荐,他都不落单,
吃遍各式汤底,各类配料,
各家不同呈现。。。。。。。





最后,他还是喜欢这款充满奶香气的鱼头米粉。
问安迪给他煮一碗,少说也有数个月了。



朋友从家乡带来一盒新鲜的石斑鱼头,
我一看马上想到,是时候兑现成若了。。。。



鱼头米粉
(供3人份)

材料:
石斑鱼头9块 ( 用少许盐, 胡椒粉和麻油腌制1小时)
咸菜丝  3汤匙
姜9片
番茄 1 颗(切成6块)
青葱 1支 (切段)
淡奶 适量
米粉 210克(浸软)
水酸梅 3颗
绍兴酒 适量
蒜油 适量

上汤 900毫升
*  姜鱼仔150g,洗净沥干水,和 老姜5片,清水1500毫升,熬煮30分钟,成约900毫升上汤。

做法
1. 石斑鱼头块,平均沾粟米粉, 高温油炸直金黄备用
2. 淘出1碗分量的汤底, 下1大匙咸菜丝, 2片番茄, 1颗水酸梅和3片姜煮滚至出味
3. 下米粉, 试味再稍微调味, 下淡奶和1大匙绍兴酒即熄火
4. 加入已炸好的鱼肉, 葱段和蒜油即可享用。







Fish Head Bee Hoon/Rice Vermicelli 
Serves 3

Ingredients:
9 grouper fish head pieces (marinated in some salt, pepper and sesame oil for 1 hour)
3tbsp preserved vegetable (chopped into thin pieces)
9 slices of ginger
1 tomato (cut into 6 pieces)
1 stalk spring onion
Some evaporated milk
210g bee hoon (soaked to soften)
3 preserved plums
Some shao xing wine
Some garlic oil

Broth (900 ml)
* Wash and drain 150g of anchovies, then put it in a pot together with 5 slices of ginger and 1500ml of water and proceed to cook for 30 minutes until there is about 900ml of broth left.

Method:
1. Coat the fish head pieces with a layer of cornflour, then deep fry it over high flame until golden.
2. Laddle out a bowl of broth into a pot, add in 1tbsp of preserved vegetables, 2 pieces of cut tomato, 1 preserved plum and 3 slices of ginger, then boil the mixture until fragrant.
3. Add in the been hoon and season as desired, then add in some evaporated milk and a big spoonful of shao xing wine before turning off the flame.
4. Add the fried fish pieces, spring onion and garlic oil to the soup and serve.

软度适中的米粉,
浸泡在奶香清甜的汤底中,
每一口,都是美味可口,
加上炸过扎实的鱼肉,醒胃的咸菜丝,番茄块,
别说对鱼头米粉情有独钟的安哥,
就是我也爱上这香醇的鱼头汤呢!!!
