蓝花冰皮月饼 (Blue-pea Snow Skin Mooncake)

一点点好奇心,
一点点好玩心,
加上一些些蓝花 ,
顺理成章,把这好看又别致的蓝花冰皮月饼,
给诞生了。

A little bit of curiosity,
A little bit of fun,
Plus some blue-pea flowers,
Adds up to this good-looking and unique Blue-pea Flowers Snowy Mooncake.
 

蓝花- 英文名字为- butterfly-pea or blue-pea




对它淡淡的浅蓝色,很是喜欢,
所以就随意的搓粉倒模,
结果还是带来惊喜 。

Having used the blue-pea flower in the making of Kuih Tatal,ondeh-ondeh,nasi kelabu and Nyonya chang,I have come to like the pale blue colour of the blue-pea flower extract. Therefore,I have used it in the making of this mooncake,with pleasantly surprising results.


 皮上那随意散布的糕粉,
像不像雪花飘落,
所以才叫(snowskin)冰皮嘛。 

Doesn't the "koh fun" scattered on the skin of the mooncake look like freshly fallen snow? Makes it literally "snowskin"!



内馅也随意的裹上健康的南瓜莲蓉,绿茶莲蓉和南瓜籽。

As for the filling,I have used the nutritious pumpkin lotus seed paste and green tea lotus seed paste mixed with pumpkin seed.



蓝花冰皮月饼 
(Blue-pea Snow Skin Mooncake)

冰皮材料:。。。。。Snow skin ingredients :
A
130克糕粉。。。。。。130g cooked glutinous rice flour(koh fun)
180克糖粉。。。。。。180g icing sugar

B
35克白油。。。。。。。35g shortening
C
130毫升蓝花汁。。。。130ml blue-pea juice
1/2汤匙香草精。。。。。1/2tbsp vanilla essence

 20朵蓝花加入滚水,放入微波炉,
煮滚1分钟,就可获得蓝花汁。 

Add hot water to 20 blue-pea flowers,then put in the microwave for a minute to obtain the blue-pea juice.

馅料:。。。。。。。。。。。。 Filling:
A
160克绿茶莲蓉馅。。。。。160g green tea lotus seed paste
640克南瓜莲蓉。。。。。。。640g pumpkin lotus seed paste
16克烤香南瓜籽。。。。。。。16g toasted pumpkin seed

做法:

1。  冰皮: 把材料A 筛过,加入材料B 混合均匀。倒入材料C 搅拌成团。分成8 份,每份60克。搓圆。

2。  绿茶莲蓉馅: 绿茶莲蓉馅分成8小份,搓成圆球形,每份20克。

3。  南瓜莲蓉馅料: 南瓜莲蓉加入烤香瓜子分成8份,每份80克搓圆,压扁,裹入一粒绿茶馅,搓圆,待用。

4。  将冰皮按扁,裹入做法(3)馅料。放入冰皮月饼模按出花形,轻轻敲出即可。

method:
 1.    snow skin : Sift ingredients A, add ingredient B and mix till well combined.  Add ingredients C and mix into dough. Devide into 8 portioan of 60g each. Then roll into balls.
2.   green tea lotus seed paste : Divide green tea lotus seed paste into 8 small portion of 20g each,and roll into balls.
3.   pumpkin lotus seed paste: Add toasted pumpkin seed into pumpkin lotus seed paste, divide the paste into 8 portion of 80g each.  Roll into balls and then flatten.  Wrap 1 green tea ball. Roll into ball, Set aisde.
4.    Flatten the snow skin, wrap no. (3)Fillings with snow skin.  Press into a snow skin mooncake mould.  Tap lightly to de-mould.
