印度咖哩沙丁鱼Idian Style Sardine Curry

最近安家大吹印度风,印度菜肴一道接一道,
乐坏了安哥宋,也乘机引导不好辣的Na Nak,
孩子,身在多元种族的国度,有着各族的美食佳肴,
是咱们的福气,应该好好把握及品尝,
珍惜所拥有! 


 这道印度咖哩沙丁鱼,是上Cass家偷师回来的,
加了阿三汁和各种香料,有着去鱼腥味,
同时把鱼甜味给带出来,
跟以往所煮的方法不同,美味极了!

印度咖哩沙丁鱼
原食谱:South Indian Temptations by Devagi Shanmugam

材料
沙丁鱼 1罐(沥干酱汁,保留3tbsp酱汁待用)
油 3tbsp
fenugreek(葫芦巴) 1/4tsp
anis seeds(大茴香)1/2tsp(捣烂成粗粒状)
洋葱 1粒(切片)
姜 1块(拇指般大小-切片)
咖哩叶 1串
辣椒粉 2.5tsp
cumin powder(大茴香粉) 1tsp
Asam膏(tamarind paste) 1tbsp(加1/2杯水混合)
番茄 2粒
咖哩粉 1tsp
盐 1tsp / 适量调味

做法:
1.  热油锅,炒香葫芦巴和大茴香,加入洋葱片,姜片,咖哩叶炒至香,再加入辣椒粉,大茴粉,番茄,asam 汁,咖哩粉,让它们焖煮约5分钟。

2.  加入沙丁鱼,3tbsp的罐头沙丁鱼茄汁,和1/3杯的水(我在步骤1的时候就加入了),在继续煮5分钟,加入糖和盐调味,即可。


Idian Style Sardine Curry 
Ingredients
1 can sardine in tomato sauce ( 475 gm), drained and reserve 3 heap tbsp tomato sauce from the can
3 tbsp oil
1/4 tsp fenugreek
1/2 tsp aniseed, coarsely pounded
1 onion, sliced
1 thumbsize of ginger, sliced
a sprig of curry leaves
21/2 tsps chilli powder
1tsp cumin powder
1 tbsp tamarind paste mixed with 1/2 cup of water
2 tomatoes
1 tsp curry powder
1tsp sugar
about 1 tsp of salt or to taste

Method:
1. Heat oil and add fenugreek and aniseeds and fry till fragrant.Add sliced onions, ginger, curry leaves and when they turn fragrant, all in the chilli powder, cumin powder, tomatoes, tamarind juice and curry powder.
2. Let them simmer for about 5 minutes, add in the sardines and the reserved tomato sauce from the can earlier and also 1/3 cup of water for more sauce and cook for another 5 minutes. Add in sugar and salt to taste.Remove from heat and serve.
