粟米芝士戚風蛋糕(Corn cheese Chiffon Cake)

终于第一次做戚风,
出来产品,没有预期的美,个人觉得不够高挑 。
幸好却有预期的好吃。


问了一位对戚风蛋糕有研究的朋友,
问题可能出在模子的失误,
以这4粒蛋食谱的分量,20cm的戚风模,嫌过大了,
所以,出来产品就矮矮的,失望!


请问常做戚风的姐妹们,
戚风蛋糕体不够高挑,除了模子问题,
还可有其他因素?



粟米芝士戚風蛋糕
8寸戚風模


食谱参考: Samantha Needs Vacation 

材料:
奶油芝士(cream cheese)35G
蛋黃 4粒
幼糖 30G
牛奶 50G
甜粟米(cream style)70G
粟米油 35G
低筋面粉 90G
發粉 1小匙

蛋白 4粒
幼糖 60G
塔塔粉 1/4小匙

做法:
1)把軟化的奶油芝士加糖30G攪拌均勻,再加入牛奶和甜粟米用打蛋器攪勻至無顆粒。
2)分別加入蛋黃和粟米油,并繼續用打蛋器拌勻。
3)篩入低筋面粉和發粉,用打蛋器以不同的方向輕輕拌成均勻的面糊。
4)蛋白用攪拌機攪打至呈長粗泡狀,加入塔塔粉再把糖分3次加入,以快速較打至硬性發泡。
5)蛋白糊分3次加入做法(3)的面糊中。轻轻搅拌均匀,倒入8"的戚风模子。
6)預熱烤箱,用180度烘25~30分鐘·。

Recipe adapted from: Samantha Needs Vacation 

Ingredients: 
35G cream cheese ,soften 4 egg york30G castor sugar  
50G milk 
70G canned creamy corn 
35G corn oil 
 90G superfine flour 
 1 tsp baking powder
 

 4 egg white 
60G castor sugar 
 1/4tsp cream of tartar

Method:

1.   Beat cream cheese and castor sugar evenly, add in milk and canned creamy corn, mix well.
2.   Add in egg york, followed by corn oil,then mix well.
3.   Shift in superfine flour and baking powder, lightly stir in the opposite direction till smooth and well combined.
4.   Beat egg white till bubbly, add in cream of tartar. Separate castor sugar into 3 portions,stir in using high speed and beat until stiff.
5.   Separate egg white mixture into 3 portions,add the egg white mixture portion by portion into mixture No(3). Pour batter into the 8" chiffon mould.
6.   Bake in preheated oven at 180* for 25-30 minutes.

  3. 我第一次做的也是很矮,四粒蛋用22cm模。。。后来换18cm后,真的有高。。。听说手脚要很快,不过我相信你绝对专业的^^
