好运发财(Braised Abalone With Dried Scallop And Fish Maw)

华人向来在新年期间,讲究好意头。
好比这道“好运发财”,其中一种材料是“发菜”,
托谐音的福,希望吃了发菜,真的带来 发财。


顾名思义  -  发菜带来好运发财


除了发菜,当中还有许多山珍海味,
如:蘑菇,云耳,干贝,鲍鱼,鱼鳔,
都是名贵食材哦!


干贝熬出来的汤底,超甜,
加上蘑菇,鲍鱼和鲜甜蚝油,
是一道很赞的佳肴。


从来不知道,原来黑压压的发菜,
除了带来好意头,营养价值可高呢!

材料: 
scallop, 干贝
8只中干贝,洗净,泡在500ml清水中
50克鱼鳔,浸软,切小块
10克云耳,浸软
磨菇8朵,浸软
5片姜

调味料:
2汤匙蚝油
1汤匙生抽
1茶匙糖
适量盐,麻油和胡椒粉

少许发菜,浸软,沥干
100克冷藏鲍鱼片
1汤匙粟粉水,打芡用

做法:
1。  烧热1汤匙油,爆香姜片,加入所有的材料,泡干贝水和调味料煮滚,转小火焖30 分钟至干贝软。
2,  加入发菜和鲍鱼片煮2分钟,打芡即可上碟享用。

Ingredients :
8 dried scallop,washed,soaked in 500ml water                                
50g fish maw, soaked,cut into pieces
10g small black fungus, soaked
8 mushroom,soaked
5 slices ginger

Seasoning :
2 tsp oyster sauce
1 tbsp light soya sauce
1 tsp sugar
dash of salt,sesame oil and pepper

a littler fat choy, soaked and drained
100g frozen abalone sliced
1tbsp corn flour water, for thickening

Method :
1.  Heat up 1tbsp oil and saute ginger until fragrant.  Add in all ingredients,soaked dried scallop water, seasoning and bring to boil.  Lower the heat and simmer for 30 minutes or until dry scallops are tender.
2.  Add in fat choy, abalone and cook for 2 minutes.  Thicken with corn flour water and dish up.
