Kuih Kodok( grated coconut)

Kuih Kodok,
When I was in secondary school, a Malay classmate told me that this particular kuih is called Kuih Kodok is because its rough surface resembles a kodok (Malay for toad). This kuih is a common street food in Malaysia.

Joceline lyn

Recipe adapted from Joceline lyn
Ingredients:
5 bananas
80g flour
30g rice flour
20g castor sugar
1/4 tsp salt
2tbsp grated coconut
4 cups oil for deep frying

Method:
1. Mash the bananas.
2. Add in all the ingredients and mix into a batter.
3. Heat up the oil in a wok. Scoop a spoon of batter and deep fry it in the oil over medium flame until golden or cooked. Repeat this until all the batter is used up.

A few years ago, I have actually made this Kuih Kodok too. The recipe I had used at that time used egg, so the texture is more moist, while this recipe used grated coconut, so the kuih is more chewy. I actually like both!
