香蒜蜜汁烤鸡翼 (Grilled Honey-Garlic Chicken Wings)


想念烧鸡翼了。
超市进货一包十只,
洗净,腌制,烧烤。。。。
久违了的熟悉味道,啊。。。。。。美味可口!
有幸福的感觉,哈。。。。哈。。。。
小女人一个!


实中带软的肉质,口感一流;
鲜甜的酱汁,为之迷恋。

不论是下饭的配肴或是下酒的小吃,
它都属佳选。



由多种香料和调味汇集的酱料,
是这道烤鸡翼的主要灵魂。


香蒜蜜汁烤鸡翼

材料 :
鸡翼   10只
蒜茸   1汤匙
姜茸   1汤匙
青葱段 3支
生抽   2汤匙
老抽   1/2茶匙
鱼露   1/4茶匙
糖       1汤匙
胡椒粉   适量
粟米粉   适量
蜂蜜       适量
奶油       适量

做法
1。 鸡翼洗干净沥干, 除蜂蜜和奶油以外的材料,放入深碗里拌匀,鸡翅放入腌至少2小时。

2。 将腌制好的鸡翼和腌汁放入一个小煲,小火焖煮5 - 6分钟或鸡翼上色。

3。预热烤箱220℃。烤盘内垫锡纸,将腌好的鸡翼排放在锡纸上,刷上一层奶油,放入烤箱烘烤(bake)7分钟。

4。 将鸡翼翻面,刷上蜂蜜,继续烘烤7分钟,再刷上蜂蜜。 将烤箱功能调换成炙烤(broil)3 - 4 分钟。(一般少于5分钟,而且要常检查,以免烤焦)。

5。 烤好的鸡翼,趁热享用。

Bake - 烘烤, 是用循环对流热加热食品(下加热),加热均匀
Broil - 炙烤, grill,是用辐射热加热食品(上加热),加热快速但限于表面

一般情况下用烤箱做西菜都是使用bake方式,尤其是需要长时间的食品例如圣诞大餐火鸡等,broil往往仅用于最后的“脆皮”,使用时间较短,一般少于5分钟,而且要常检查,以免烤焦食品。



Grilled Honey-Garlic Chicken Wings

Ingredients:
Chicken wings   5 pairs 
Chopped garlic   1tbsp
Chopped ginger   1tbsp
Spring onion   3 stalks
Soya sauce  2tbsp
Dark soya sauce  1/2tsp
Fish sauce   1/4tsp
Sugar       1tbsp
Some pepper  
Some corn flour
Some honey     
Some butter

Method :
1. Clean and pat dry the chicken wings, put them together with all ingredients accept honey and butter into a mixing bowl, mix well and marinate for at least 2 hours.
2. Transfer the marinated chicken wings and the sauce into a pot, simmer for about 5 - 6 minutes or until the chicken wings turn brown.
3. Preheat oven at 220°C. Line the baking tray with aluminum foil, arrange the chicken wings on the tray, coat them with butter and bake for 7 minutes.
4. Turn the chicken wings over, brush them with honey and continue to bake for another 7 minutes.  Switch the oven function to broil and broil for about 3 - 4 minutes. (Normally it shouldn't be more than 5 minutes, check regularly to prevent charring).
5. Serve the grilled honey-garlic chicken while still hot.


Tips:
Baking - Heats the food evenly in all directions, usually uses bottom flame.
Broiling - Heats the food using radiation, usually uses top flame and is very fast but only cooks the surface.

Typically, when using an oven to cook Western dishes, the bake function is used. This is especially true for dishes that take a long time to cook, eg. Christmas turkey. The broil function is more commonly used to crisp up the skin and is used for a short time (typically less than 5 minutes) while requiring frequent checking to prevent charring.



腌制足时入味的鸡翼,加上烧烤火候拿捏得准,
往往叫人啃得欲罢不能,甚至回味无穷呢!



同样的腌制,可以随个别方便以烤箱烤炙或碳烧烧烤。
当然碳烧会更加美味香醇!
