柠檬味Eno发糕 (Lemon Eno Huat Kueh)


 做给在天国的两位妈妈。
自从开blog后,每年的清明,
我都会亲自蒸发糕给两位和蔼可亲的妈妈。

献上我小小心意,
在天国的她们,感应得到我的一片思念和感恩。





看到微微笑的发糕,
仿佛看到两位慈祥的妈妈。。。。。。
果然每逢过节倍思亲!!!





柠檬味Eno发糕
(共做8个)
材料  :
粘米粉 200克
糖粉80克
清水 180毫升
柠檬味Eno 1包
少许的食用黄色素(随喜)

1.将粘米粉、糖粉与清水搅拌均匀,静置30分钟。
2.准备好蒸锅后,开火煮水。
3.加入柠檬味Eno搅拌均匀。
4.倒入模里约9分满。滴入适量黄色素,以牙签调散。
5.水煮滚后,放入模,以大火蒸约20分钟。

Lemon Eno Huat Kueh
(Yields 8cups)

Ingredients:
200g rice flour
80g icing sugar
180ml water
1pkt lemon Eno
Edible yellow coloring (optional)

Method:
1. Mix the rice flour, icing sugar and water evenly, then leave aside to rest for 30 minutes.
2. Prepare the steamer and bring the water to a boil.
3. Add the lemon Eno powder to the mixture in step 1 and mix evenly.
4. Pour the mixture into moulds to fill up about 9/10 of the mould. Add a drop of edible yellow food colouring and use a toothpick to spread the colour.
5. When the water in the steamer is boiling, arrange the moulds in the steamer and steam over a high flame for 20 minutes.
