原本一早就要上贴子的,
临时来了客人,
又是谈天叙旧,又是外食招待,
这一谈二食,就延到现在了,
哈。。哈。。。
前几天,炸年糕,剩下的芋头,
不想让它有年无月地冬眠与冰箱,
虽然家里五香粉缺货,
依然不减我想蒸芋头糕的欲望。
自制辣椒酱,让原本已经好好味的芋头糕,
更是加分!

材料:
500克芋头,切丁
150克小葱头,切片
60克 虾米,洗净,剁碎
300克粘米粉加400克水调匀成粉浆
600克水备用
调味料:
3/4茶匙 盐
1茶匙 糖
1/2茶匙 五香粉
1/2茶匙胡椒粉
表层装饰 :
适量的炸香小葱头,炒香芝麻,青葱粒和红辣椒粒

做法:
1。热锅,下5大匙油。把小葱头炸至芳香及带金黄色即可。
2。捞出一半炸香的葱头和油。另一半留在锅里。
3。继续用热锅和锅里的油炒香芋头至金黄色。放入虾米和芋头一起兜抄片刻(约2-3分钟)。倒入600克水,以中火煮至滚。下调味料,拌匀。
4。徐徐拌入粉浆。一面倒,一面炒至面糊呈浓状及不黏锅底即可熄火。
5。9寸圆烤盘涂上少许油,芋头面糊倒入,表面抹平。大火蒸45分钟。
6。取出,撒上炸香的小葱头,葱花,辣椒和芝麻,待冷却后,切小块,配搭辣椒酱,更是美味可口。

6条红辣椒(去籽)、3条指天椒、3瓣蒜头、1汤匙糖及1/2茶匙盐~ 放入搅拌机打碎至幼滑,倒入小煲,稍微煮滚即可。

Home made chili sauce :
6 red chili(seedless), 3 chili padi, 3 clove garlic,1 Tbsp sugar and 1/2 tsp salt ~ Blend all the ingredients with blender until fine and smooth. Pour the chili paste into a small pot, cook to boil.

300 g rice flour add with 400 g water, mixed well to form flour mixture, set aside

seasoning:
3/4 tsp salt
1 tsp sugar
1/2 tsp 5-spice powder
1/2 tsp pepper
Topping :
Some fried shallots, toasted sesame seed, chopped spring onion and chopped Chile.
Method:
1. Heat wok, put in 5 tbsp oil. Fried shallots til golden brown.

2. Remove half from wok and set aside for garnishing.
3. Fried yam cube with the other half of the shallots in wok til golden brown. Add in driend shrimps, fried together with yam for another 2-3 minutes. Add in 600g of water and bring to boil. Add in seasoning and stir well.
4. Slowly add in the flour mixture. Keep stirring till mixture becomes thicken but not stick to the wok.
5. Pour mixture into 9" greased steaming tray . Steam on high heat for 45 minutes or until well cooked.
6. Whilst still hot, spread remaining fried shallots on top of the cake surface. Garnished with chopped spring onion and chillies .
When cold, cut the cake and sprinkle with toasted sesame seeds and best served with sambal and sweet sauce.

对这芋头糕赞个不停。。。
当然嘛,
整500克的芋头,
炸小葱头,虾米,烤香白芝麻,新鲜青葱。。。
跟外面卖的比起来,当然真材实料!
何况还有提味的自制辣椒酱。
想要难吃,还真的挺难的:)

好吃的芋头糕就是要料足,配搭自制辣椒酱啊。
回复删除可惜就是一大颗芋头买了却消化不了那么多,所以都不敢买了。
我很爱吃芋头糕的,尤其是可以咬到多多芋头颗粒的那种。。。
