那天朋友到访一起玩蒸寿桃,
我预早烤好的蛋糕。
因为她最喜欢“相思蛋糕。
果然,她一吃就喜芝芝,一片接一片。
最后剩余的2/3的蛋糕也是让她给打包回去。
蛋糕分三层,
原味个别是上下层;充满蛋香,糕体松软无比。
中层便是摩卡口味,浓郁的摩卡香气,糕体微实。
整体软中带实,甜度适中,并带有迷人的摩卡口味,
不错,不错!
材料:7寸方模
A
全蛋 1 个
盐 1/4 茶匙
粟米油 60克
牛奶 50克浓缩摩卡 30克(2克即溶咖啡粉+ 5克可可粉克 + 水 )=30克
低筋面粉 50克,25克
B
蛋白 200克
细砂糖 80克
柠檬汁 1茶匙
做法 (A)
1。蛋黄、全蛋、盐、粟米油、用打蛋器打至起小泡,分成1/3 和2/3。
2。 将1/3的做法(1)加入浓缩摩卡,搅拌均匀,筛入25克的低筋面粉,拌匀成摩卡蛋黄糊。
3。 将2/3 的做法(1)加入牛奶,搅拌均匀,筛入50克的低筋面粉,拌匀成原味蛋黄糊。
做法 (B)
1。蛋白加+柠檬汁+细砂糖打成硬性发泡的蛋白霜。
2。将摩卡蛋黄糊和1/3的蛋白霜混合均匀成摩卡面糊。同样的将原味蛋黄糊与剩余的2/3 蛋白霜混合均匀成原味面糊。(像戚风蛋糕的混合法)
3。将50%的原味面糊倒入7寸的方模里。接着倒入摩卡面糊,最后再倒入另外50%的原味面糊,抹平表层,把空气敲出。 放入预热烤箱,160'C,蒸烤法,烘烤50分钟或至熟便可。

4。蛋糕烘好后,立刻取出,倒扣待凉后才切开享用。
Mocha Ogura Cake

A
egg york 100g
whole egg 1
salt 1/4 tsp
corn oil 60g
milk 50g
concentrated mocha 30g
( 2g instant coffee powder + 5g cocoa powder + water = 30g)
cake flour 25g ,50g
B
egg white 200g
castor sugar 80g
lemon juice 1 tsp
utensil :
7"square spring-form pan
Method :
A
1. Beat the egg york,whole egg,salt,corn oil,until fluffy.
2. Add in concentrated mocha into 1/3 of the mixture (no.1), mix well. Sift in 25 g of cake flour, mix well to form an even mocha egg yolk mixture.
3. Add in milk into 2/3 of the mixture (no.1), mix well. Sift in 50 g of cake flour, mix well to form an even original egg yolk mixture.
B
1. Beat egg white + lemon juice + castor sugar until stiff peak (meringue).
2. Mix 1/3 of the meringue with the mocha egg yolk mixture to form a light mocha batter. Mix the balance of 2/3 meringue with original egg yolk mixture to form a light original flavor batter .(apply chiffon cake mixing method)
3. Pour 50 % of the original flavor batter into the 7"pan, follow by the mocha batter, lastly pour the other 50 % of the original flavor batter. Smooth the surface, try to get rid of the air by lightly tapping the pan.
4. Put pan into a larger pan half-filled with hot water. Bake with preheated oven at 160'C for50 min or until baked.
5. Once baked, remove from the pan immediately, inverted on a rack and let it cool.
