1 Tbsp(alkaline water) 230g sugar 250ml water + 25 Pandan leaves (blended and extract the juice) 1 drop of Pandan concentrate (optional) 3 pandan leaves
120g peanut oil 1/2 Tbsp maltose
Method :
1. Boil 800ml water, ad in 1Tbsp alkaline water and the lotus seed, cook for 5 minutes, remove the lotus seed's skin. soak in the water for 30 minute to eliminate the alkaline flavor.
2. In a pot,cook the skin less lotus seed with 250ml Pandan juice until soft. Blend it well while it is hot to form a greenish pandan lotus seed paste.
3. In a wok, put in pandan lotus seed paste, 3 pandan leaves and the sugar, stir-cook with low flame until a little bit dry.
4. Add in peanut oil in 3 times, stir- mix well. Add in maltose stir- mix until the paste nonstick to the wok, remove from the wok.
5. Rest in the room temperature for 1 day, when the pandan lotus seed paste become harder, can use as a moon cake filling.
