泰式青咖哩鸡(简易版) Thai Green Curry chicken (Simple version)




 距离上回,安家厨房最后一次飘来青咖哩香,
应该是2年多前的事了。
那是因为,料多工杂,加上料理的含油量惊人,
所以都是偶尔在餐馆少量的解解馋罢了。
The last time I cooked Green Curry in the house was, what, two years ago? It is a rather tedious recipe to make, and it contains such high oil content, that we usually only eat it occasionally at restaurants.




 这次因为一位好友旅泰回来,给安迪带回1包青咖哩酱。
加上这个月的小拇指主题为“鸡”,
那就随缘,再次做这道开胃的料理咯。
 A friend bought me a packet of Green Curry paste from Thailand recently, and since this month's Little Thumbs Up theme is chicken, I thought, why not?

泰式青咖哩鸡(简易版)

 材料 :
500克  鸡肉,洗净斩块
1包      包装青咖哩酱料
250毫升  椰奶
300毫升  水
1条      茄子,切滚刀
1根      辣椒,去籽
5粒      小番茄
20克    罗勒叶,加点水搅拌成糊
适量糖       
一些薄荷叶,罗勒叶

做法 :
1.  小火烧热一个汤煲,倒入椰奶,罗勒糊和青咖哩酱料。
2。 加入鸡肉块,翻炒均匀,倒入水,上盖小火焖煮10分钟。
3。 加入茄子,小番茄,辣椒,薄荷叶和罗勒叶,小火焖煮至所有材料软。
4。  加入糖调味即可,最后以白饭配食。



Thai Green Curry chicken (Simple version)

Ingredients :
500g     chicken, chopped into small pieces
1pkt      green curry paste 
250ml   coconut milk
300ml   water
1          egg plant, cut slanted 
1          chilli, remove the seeds
5         cherry tomatoes   
20g      basil leaves, blended into paste with some water
some sugar 
some mint leaves and basil leaves 


Method : 
1. Heat up a pot, then pour in coconut milk, basil paste and green curry paste.
2. Add in chicken and stir-fry evenly, then pour in water, cover the lid and simmer with low flame for 10 minutes.
3. Add in egg plant, cherry tomato, chilli, mint and basil leaves. Simmer with low flame until all ingredients have become soft and tender.
4. Add sugar to taste. Serve with rice. 


 这次托朋友的福,有了这包装咖哩酱,
跟2年多前,自己搅酱的青咖哩 ,比较起来,轻松多了。

Cooking Green Curry is so much more easier with the ready-made paste! It's definitely way easier compared to the Green Curry recipe I used two years ago, which had me making the paste from scratch by myself. I owe you my gratitude, friend!

The fragrant lemongrass, green chilies and citrus, mixed with the sweet basil and mint, complimented with the thick coconut milk. This uniquely green curry will have you craving more with each bite!

  8. frankly, this is one of those dishes i never thought of making at home.. leychey..... so kudos to u arrr.... even if it's paste.. still, all the cut cut cut, chop chop chop... 莫搞我呀。。. thumbs up!
