杏仁巧克力豆杯子蛋糕 (Almond Chocolate Chips Cupcakes)



 时光匆匆,三月已失,又见四月到。
知道四月份的“最佳食谱”主题为杏仁,
对我来说,正合意。
因为我趁机消耗在冰箱冬眠已久的杏仁存货。
Time really flies! Before we know it, it's already April. April's theme for Best Recipes is almond, and that really suits me since I still have a lot of almonds in the fridge waiting to be used!






 杏仁巧克力豆杯子蛋糕

可做6杯

材料:
鸡蛋两个
糖50克
低粉50克
杏仁粉20克
发粉 1/4茶匙

橙汁13克
色拉油13克

表层:
杏仁片适量
耐高温巧克力豆适量。

做法:
1。将所有分类拌匀过筛;橙汁和油倒入一个小碗里置旁待用
2。鸡蛋打入无油无水的盆中,将打蛋盆“坐”在热水(60度左右)盆里,这样更容易打发。用电动打蛋器隔热打发,先 低速打散,一次性倒入糖,转高速打发至浓稠,可见纹路清晰,最后转低速打细腻,抬起蛋糊不会轻易滴落,即为 全蛋打发
3、筛入粉类,拌匀
4、将橙汁和油搅拌均匀,倒入盆中,拌匀
5、将蛋糊盛入裱花袋里,挤入纸杯八分满,撒上杏仁片和巧克力豆
6、烤箱170度预热,中层15分钟左右。


Almond Chocolate Chips Cupcakes
Yield 6 cups

Ingredients :
Egg 2

Caster sugar 50g
Cake flour 50g
Almond meal 20g
Baking powder 1/4tsp

Orange juice 13g
corn oil 13g

 Topping:
Some almond flakes
Some chocolate chips


Method :
1. Sift all the flour and powder. Put the oil and orange juice in a small bowl.
2. Beat the eggs into a dry and oil-free bowl, then put the bowl into a pot of hot water (about 60°C). Using an electric mixer, beat at low speed, then add in all the sugar and switch to high speed and beat until thick. When the egg mixture has become rather viscous, switch to low speed and beat until it's texture becomes fine. When you lift the mixer,the egg mixture should cling on without falling off.

3. Fold in sifted flour and powder.
4. Add in oil and orange juice, mix well .

5. Pipe the batter into paper cups until 3/4 full, then scatter some almond flakes and chocolate chips on top. 
6.  Bake in a preheated oven at 170°C for 15 minutes .

 蛋糕体松软,充满香橙杏仁香气。
加上表层的杏仁片和巧克力粒,
安迪1杯,安哥2杯,娜娜3杯,
一个早餐,就搞定了。
The soft, fragrant orange cake mixed with the aroma of  orange-almond, complimented with the almond flakes and chocolate chips was so delicious, one breakfast was all it took to finish everything!
