五彩缤纷冰皮月饼 (Assorted Snowskin Mooncake)



相比往年,今年的冰皮的尺码被安迪大大的缩小。
还有意的一次做上6款不同的口味,
原味,绿茶,鲜橙,草莓,蓝莓和蓝花;五彩缤纷,绮丽无比。
意图让吃的人惊喜雀跃,而缩小版看了悦而不腻。
Compared to the past few years, I've made my snowskin mooncakes smaller this year. Also, I made 6 different flavors: vanilla, green tea, orange, strawberry, blueberry and blue-pea. Not only are they pleasant to the eyes, but also gives a variety of delicious tastes!




后来,越看越可爱,
随兴而发,竟然越做越小,
也来个翻版马卡龙,以冰皮做成马卡龙冰皮月饼。
出来的效果,还真的微妙为俏!
In fact, it looks so cute, I actually thought of making a Macaron version of the mooncake: the Macaron Snowskin Mooncakes.






五彩缤纷冰皮月饼
( 可做12个花形和6个字形的6色小月饼)

冰皮材料:
准备以下材料6份
糕粉25克
糖粉33克
白油6克
冷水20克
内馅:
莲蓉瓜子内馅225克
芋头瓜子内馅225克 

做法:
1。将莲蓉瓜子内馅分割成9份,滚圆。供给白色云尼拉,绿茶和鲜橙冰皮使用。另外将芋头瓜子内馅分割成9份,滚圆。供给蓝莓,草莓和蓝色色云尼拉使用。

2。准备6个盆子,个别放入1份以上冰皮材料。

3。白色云尼拉口味:首先把其中1盆的材料,加入1/2茶匙云尼拉香精,用手搓拌均匀的冰皮面团。将面团分别切割成2份(30克)的小面团和1份(25克)的小面团。

4。将一份小面团(30克)的,滚圆杆平,裹上一粒莲蓉瓜子夹馅,搓圆裹薄粉,塞进一个花形模子,脱模排在盘子上即可。

5。 重复做多一个花形(30克)和字形(25克)及完成白色云尼拉口味。

6。 绿茶口味:3克绿茶粉 + 10克热水,搅拌均匀,加入其中1份冰皮材料。做法同上。

7。 鲜橙口味:1/4 茶匙鲜橙精华液加入其中1份冰皮材料。做法同上。

8。 蓝莓口味:3克蓝莓粉 +1/2滴紫色素 + 10克热水,搅拌均匀,加入其中1份冰皮材料。做法同上。(内馅换成芋头瓜子)

9。 草莓口味:3克草莓粉  + 10克热水,搅拌均匀,加入其中1份冰皮材料。做法同上。

10。蓝色云尼拉: 1/2茶匙云尼拉香精 + 1/2滴蓝色素,搅拌均匀,加入其中1份冰皮材料。做法同上。




字母型模子,直径4.5公分;花形模子,直径5公分。
Diameter of "word mould" is 4.5cm;
diameter of "flower mould" is 5cm.


Assorted Snowskin Mooncake
Snowskin Ingredients :
Prepare 6 sets as below: 
25g Koh Fun (cooked glutinous rice flour)
33g icing sugar
6g Shortening
20g cold water

Filling :
225g Lotus seed paste with melon seeds
225g Yam lotus seed paste with melon seeds

Method :
1. Divide the lotus seed paste with melon seed filling into 9 portions. Roll them into balls . Keep them as filling for White vanilla, Green tea and Orange snowskin. Divide the yam lotus seed paste with melon seed filling into 9 portions. Roll them into balls . Keep them as filling for Blueberry, Strawberry and Blue vanilla snowskin.

2. Put in the 6 sets of snowskin ingredients into 6 mixing bowls separately.

3. For White vanilla : In one of the mixing bowls, add 1/2 tsp vanilla essence to the set of snowskin ingredients and mix well into a pliable dough. Divide the dough into 3 portions:  2 portions of 30g each and 1 portion of 25g.

4. Roll a 30g dough into a ball and flatten it, then wrap a ball of lotus paste filling inside. Flour it and press it into the flower mooncake mould before de-moulding onto a tray.

5.  Repeat the steps using a flower mould and a word mould to make another 2 vanilla snowskin.

6. For Green tea:3g green tea powder + 10g hot water, mix well, add into set of snowskin ingredients. Repeat the steps as above. 

7. For Orange: 1/4 tsp orange concentrate, mix well,add into set of snowskin ingredients. Repeat the steps as above.

8. For blueberry: 3g blueberry powder +1/2 drop purple coloring + 10g hot water, mix well, add into set of snowskin ingredients. Repeat the steps as above. (Change the filling with yam lotus seed paste with melon seed.)

9. For Strawberry: 3g strawberry powder + 10g hot water, mix well, add into set of snowskin ingredients. Repeat the steps as above.

10. For Blue Vanilla: 1/2tsp vanilla essence + 1/2drop blue coloring, mix well, add into set of snowskin ingredients. Repeat the steps as above.





不要以为这些月饼,光有五颜六色的好看,
其实不论内馅和外皮,都秀色可餐呢!

  8. Gosh, I'm still head away. Wish I can start making my mooncake now. According to the tradition, we can only put our hands on any traditional homemade food only after 100 days of funeral (my FIL). Hopefully, I'll be able to come up some mooncake soon. Yours look really tempting & colourful.Kudos !
