传统莲蓉馅月饼2014(Traditional Lotus Seed Paste mooncake)2014

这是安家每年必做的月饼- 传统莲蓉馅月饼。
The Traditional Lotus seed Paste Mooncake: a must for every year's Mid Autumn Festival at my house.


皆因这是安迪对妈妈的怀念的情意结。
Not only is it a way for me to remember my mother......




更是安家娜娜在芸芸月饼当中的最爱。
......it is also NaNak's favourite mooncake!


到今天2014的传统莲蓉馅月饼,都属同款,但必做的月饼。
2012, 2013, and this year, 2014, I have made this Traditional Lotus Seed Paste Mooncake every year.




传统莲蓉馅月饼
材料:                             
A(月饼皮)                                     
250克 普通面粉                               
175克 糖浆                                       
50克 花生油                                   
1茶匙 枧水                      
B (莲蓉馅)                                     
1公斤 莲蓉                                  
50克 烤香瓜子
做法:
1。  月饼皮: 将所有材料A 混合拌匀。置旁休面 30 分钟。将面团分成10份(每份约55克)。搓圆待用。
2。  馅料: 将烤香瓜子与莲蓉混合成馅,分成10份(每份约105克)搓圆待用。
3。  将饼皮团杆扁包入馅料,搓圆后压入月饼模形里,扣出排在烤盘上。
4。  放入预热烤箱,以 180°
C 烘烤10分钟,然后取出,放置一旁待冷,约10至15 分钟。最后涂上一层蛋黄,再放入烤箱继续烘烤10至15分钟至金黄色即可。     

                           
Traditional Lotus Seed Paste Mooncake 
 Ingredients:
A ( mooncake Pastry)
250g plain flour
175g golden syrup
50g peanut oil
1tsp alkaline water

B (Filling)
1kg lotus seed paste
50g roasted melon seed
Method
1.   Mooncake Pastry : Mix ingredients A till well combined.  set aside for 30 minutes.  Divide into 10 portions(each portion 55g).
Roll into balls.

2.   Filling : Devide lotus seed paste into 10 portions(each portion 105g).  Roll into balls.

3.   Wrap filling with mooncake pastry. Roll into balls.  Press into mooncake mould, Tap lightly to de-mould.

4.   Bake in a preheated oven at 180°C for 10 minutes.  Remove and leave to cool, for about 10 to 15 minutes.  Brush the top with beaten egg yolk.  Bake in oven again for 10 to 15 minutes till golden brown.

This "prosperity" mooncake brings an auspicious mood to the festival. 


华人众节日中,总会做些节日糕点,
安迪最爱做就是月饼,总觉得它们好好漂亮!
The Chinese enjoy making many kinds of delicacies during festivals. I myself really love making mooncakes; they're so pretty!

 而且它还不断的被创新,除了传统,
还有冰皮,上海,潮州,冰淇淋。。。。
层出不穷,总会有惊喜的时刻,
我喜欢! 
Plus, new styles of mooncakes keep popping up; snow skin, Shanghai, ice cream, jelly...... So much space for creativeness and surprises. I love it!

  8. Beautiful mooncake design with 3-D effect. Next year if I'm confident enough, I will get nice moulds to bake mooncakes to give away as gift.

  12. Aunty, I love these moon cakes but what is alkaline water?

    1. Hi Diana,
      The alkaline water is kind of liquid that using in some kueh or dessert to obtain chewy texture . For example like Kueh talam.
      Normally to preparetraditional mooncake pastry we will add in drop of alkaline water, it helps to make the dough more stretchable,

      Total weight of the skin and filling are 160g, so I assume it is a medium size.
