香滑鹰嘴豆黄瓜沙律 Creamy Chickpea & Cucumber Salad

鹰嘴豆异黄酮对女性健康的影响很大,
是具有活性的植物性类雌激素,
它能够延迟女性细胞衰老,
使皮肤保持弹性、养颜、丰乳、减少骨质丢失,
促成骨生成、降血脂、减轻女性更年期综合症状等。




香滑鹰嘴豆黄瓜沙律
供 3 人份

材料 :
400克      罐头鹰嘴豆,冲水,沥干
1 条         日本黄瓜,对半切片
2  根        青葱,切段
20 克       薄荷叶,剁碎
1瓣          蒜头,剁碎
40克        蔓越莓干,浸泡,沥干
80克        Greek原味酸乳酪
适量的盐和胡椒粉

做法
1。  在一个搅拌大碗内,倒入鹰嘴豆,黄瓜片,青葱段,蔓越莓干和薄荷碎,拌匀。

2。  将Greek酸乳酪,蒜蓉,盐和胡椒粉混合均匀。 拌入做法(1)的材料里,拌匀。盖上保鲜膜,冷藏于冰箱直到享食。












Creamy Chickpea & Cucumber Salad
For 3 pax

Ingredients :
400g       cans chickpea, rinsed and drained
1             janpanese cucumbers,halved and sliced
2             spring onions,sliced
20g         mint leaves,chopped
1             small garlic cloves, crush
40g         dried cranberry, soaked and drained
1/4 cup   Greek style plain yoghurt
some salt and pepper

Mehtod :
1.  Combine chickpeas, cucumber, spring onions, dried cranberry and mint leaves in a large bowl.

2.  Mix yoghurt and garlic together and season with salt and pepper.  Fold through chickpea mixture.  Cover and refrigerate until ready to serve.

鹰嘴豆日本黄瓜优格沙律(Creamy Yogurt Chickpea & Cucumber Salad)



 一旦开封后的优格,恐怕会很快坏,
所以再用一些做成沙律,供家人当晚餐。
顺便又可以继续支持我的博客好友Cherly的小拇指活动 - 优格之旅。
Yogurt spoils easily once opened, so I thought I'd use it to make some salad for my family. Even better, I can submit it to my blogger pal, Cherly's LTU event, which has yogurt as its theme this month.


 这是一道低脂健康的料理。
爽口的日本黄瓜加上甜香的鹰嘴豆,拌入香醇的优格和适量的调味香料,
有意想不到的美味哦!
This is a low-fat and healthy dish which doesn't lack in the taste department either. The crunchy Japanese cucumber and chickpeas make quite an interesting combination with the yogurt and seasonings! Delicious!


鹰嘴豆含有丰富的优质球蛋白,18种氨基酸
其中人体 必需但自身不能合成的8种氨基酸全部具备,
而且含量比燕麦还要高出2倍以上。
同时也含大量的膳食纤维,
有“粗粮中的粗粮”之美誉。(详文在这里)。

鹰嘴豆日本黄瓜优格沙律
(供3人份)

材料 :
1罐  罐头鹰嘴豆,冲洗,沥干
1条  日本黄瓜,对半切片
2 根 青葱,切幼粒
5粒  樱桃番茄,切片
1/4 杯,薄荷叶,剁碎
1/2 杯 希腊(Greek)原味优格
1 瓣 蒜头,剁碎
适量的盐,胡椒粉和麝香草
 
做法  :
1。 将日本黄瓜,樱桃番茄,鹰嘴豆,青葱粒和薄荷碎刚入一个大碗里。
2。 将蒜蓉和优格混合,加入做法(1)的碗里,调入适量的盐,胡椒粉和麝香草。  轻轻搅拌所有材料,封上保鲜纸,冷藏于冰箱直到适时享用。




Creamy Yogurt Chickpea & Cucumber Salad
( serves 3)

2 Spring onions,sliced
1/4 cup mint leaves, chopped
1/2 cup Greek style plain yogurt
1 small garlic clove,crushed
some salt,pepper and thyme.

Method  :
1.   Combine chickpeas, cucumber, cherry tomato,spring onions and mint in a large bowl.
2.   Mix yogurt and garlic together and season with salt, pepper and thyme.  Fold through chickpea mixture.  Cover and refrigerate until ready to serve.
