云石斯里木卡糕(Marble Kuih Seri Muka)


斯里木卡糕做很多了。
心血来潮,想蒸个云石花纹来看看。


蒸前花纹还不错的,
可惜,蒸后纹路没想象中清晰。

我想有机会再试,会在颜色上调整,希望会更好。
也罢,不完美就是意味着需要再接再厉💪


虽然外貌没有达我的标,
但是美味不缺。
香甜松软的糯米层,芳香可口的香兰云石层,
两者相容,椰奶香气浓郁,美味可口,
依然得到家人的青睐。






云石斯里木卡糕
食谱参考 : 斯里木卡糕

下层材料:
糯米 ~ 300g (浸4小时)
椰浆 ~ 150ml
水~ 50ml
盐 ~ 1/4 茶匙
班兰叶 ~ 2片(切成8小片)

 做法:
1。将全部材料倒入8寸方型烤盘内,稍微搅拌均匀,排班兰叶在上面,蒸15分钟。

2。取出班兰叶,再度轻轻搅匀,继续蒸5分钟。

3。将烤盘取出来,并将饭压紧,备用。


上层材料(A):
 鸡蛋 ~ 1粒
幼糖 ~ 60g
普通面粉 ~ 18g
玉粟粉 ~ 8g
盐 ~ 1/8茶匙
班兰汁 ~ 50ml (3片班兰加入水打成汁)
椰浆 ~75ml

上层材料(B):
 鸡蛋 ~ 1粒
幼糖 ~ 60g
普通面粉 ~ 18g
玉粟粉 ~ 8g
盐 ~ 1/8茶匙
水 ~ 50ml
椰浆 ~ 75ml

上层做法:
1。先将材料A和B的鸡蛋和幼糖分别用搅拌器搅拌约2分钟,备用。

2。另外,分别在两个大碗里放入其它材料混匀拌匀。加入(1)再拌匀,过滤。

3。然后个别将A和B放入蒸锅里边煮边搅拌至50%浓稠即可(大约只蒸5分钟)。将浓稠的A和B面糊交替倒入糯米饭上,形成云石的图文。

4。用中火蒸15-20分钟或凝结,取出待冷后,切块即可。 





将烤盘取出来,并将饭压紧,备用。
 Remove the steaming tray, press the cooked glutenous rice firmly and set aside for later use.



将材料A和B的鸡蛋和幼糖分别用搅拌器搅拌约2分钟,备用。分别在两个大碗里放入其它材料混匀拌匀。加入(1)再拌匀,过滤。

 Beat well the eggs and sugar from ingredients A and B for 2 minutes, set aside.
 In 2 mixing bowls, separately pour in the other ingredients from A and B. Mix well. Add in (1), mix well and strain.





然后个别将A和B放入蒸锅里边煮边搅拌至50%浓稠即可(大约只蒸5分钟)。

Separately pour the strained mixture A and B into a pot and stir cook with low flame until it become 50% thickens (about 5 minutes)


将浓稠的A和B面糊交替倒入糯米饭上,形成云石的图文。
Alternately pour the thickened batter A and B onto the cooked glutenous rice,to form the marble print.


Marble Kuih Seri Muka
Recipe refer : Kuih Seri Muka

Bottom layer ingredients: 
Glutenous rice ~ 300g (soak into water 4 hours)
Coconut milk ~ 150ml

Water ~ 50ml
Salt ~ 1/4 tsp
Pandan leaves ~ 2 (cut into 8 pcs)

Method:
1.  Pour all the ingredients into an 8-inch square steaming tray. Slightly stir the glutenous mixture, then place the pandan leaf pieces on top and steam for 15 minutes.

2.  Remove the pandan leaf pieces, stir the glutenous rice one more time until even. Continue to steam another 5 minutes.

3. Remove the steaming tray, press the cooked glutenous rice firmly and set aside for later use.

Top layer (A) ingredients :
Eggs ~1
Caster sugar ~ 60g
Flour ~18g
Corn flour ~ 8g
Salt ~ 1/8tsp
Panda juice  ~ 50ml (3 pandan leaves blended with water)
Coconut milk~ 75ml

Top layer (B) ingredients :
Eggs ~1
Caster sugar ~ 60g
Flour ~ 18g
Corn flour ~ 8g
Salt ~ 1/8tsp
Water  ~ 50ml 
Coconut milk~ 75ml

Top layer Method 
1.  Beat well the eggs and sugar from ingredients A and B for 2 minutes, set aside.

4.  Steam with medium flame for 15 - 20 minutes or till solidified. Remove from the steamer, slice and serve after it has cooled completely.
