萨瓦迪卡!
继续弥补那天泰餐的遗憾。。。。
话说那天全家外食泰餐时,
原本点道青木瓜沙律的,
可是下单的侍应说没卖青木瓜沙律,
唯有将就点了它的姐妹 - 芒果沙律了。
虽然也吃得津津有味,
但是心里依然挂念着青木瓜沙律。
难得问起两父女,
竟然也异口同声说,想吃。
好呗,
有了粉丝,自然得卖力些。
就往“万黄丛中一颗青”,
把它给扛回来,
刨丝,制浆,搅拌,
就酱,把思念化为动力,
动力化为美食。
泰式青木瓜沙律
供4人食用
材料:
800克生木瓜 1个(刨成木瓜丝,重约450克)
樱桃番茄 5个 (1切成2)
长豆 3条 ( 切1寸长),滚水川烫30秒,沥干(随喜)
葱头仔 1粒 ( 切丝)
花生 80克(预先炒香、去膜,搅碎备用)
调味料:
鱼露 3汤匙
糖 2汤匙
酸甘 3个(挤出酸甘汁)
舂捣材料 :
香茅 1支
大蒜 3瓣
葱头仔 3粒
虾米 2汤匙,浸泡至软
小辣椒 2条, 去籽
樱桃番茄 3粒,切半
芫茜/香菜 100克,去根
做法:
1。将调味料搅拌至糖溶解,置旁待用。
2。把所有舂捣材料顺序一一舂捣至糜烂。
3。 在一个大的搅拌盘里,放入青木瓜丝,切片樱桃番茄,长豆和葱头丝。加入捣烂材料和调味料,搅拌均匀。试味道,随个人喜爱做出适量的调整。
4。 最后把青木瓜沙律排放在摆盘里,撒上适量的花生碎可享用。

julienne green papaya weigh about 450g
把所有舂捣材料顺序一一舂捣至糜烂
Pound each of the ingredients to be pounded
until completely mashed.
预先炒香花生、去膜,搅碎备用
saute the peanuts until fragrant, skinless and blended
Thai Green Papaya Salad/ Som Tam

Ingredients:
1 800 green papaya (julienne weigh about 450g)
5 cherry tomato (halved)
3 long beans (cut into 1 inch pieces), blanch 30 seconds and drained(optional)
1 shallot (cut into slices)
80g peanuts (saute until fragrant, skinless and blended)
Seasoning:
3 Tbsp fish sauce
2 Tbsp sugar
3 lime (squeeze the juice)
Ingredients to be pounded:
1 stalk lemon grass
3 cloves garlic
3 shallots
2 Tbsp Dried shrimp, soak to soft
2 chili padi, seedless
3 cherry tomato, halved
100g coriander, removed the root
Method:
1. Mix the seasoning ingredients together and stir until the sugar has completely dissolved. Set aside for later use.
2. Pound each of the ingredients to be pounded until completely mashed.
3. Put the julienned papaya in a large mixing bowl and add in the halved cherry tomatoes, blanched long beans and sliced shallot. Add in the seasoning from step (1) and pounded ingredients from step (2), toss them evenly. Give it a taste and make further adjustments as desired.
4. Serve up the salad in a plate and garnish with peanuts.
