三丝炒冬粉 (Fried Glass Noodle with Julienned Vegetables)



轻松又自在的星期六,
打开嫂嫂从泰国带来的冬粉泡一泡水,
从冰箱拿出虾仁和鸡肉块退一退冰,
斩板上,随性的把配菜切切丝,
然后,开锅,翻炒,。。。。。。。。。。
又是一餐营养均称的美味午餐。
On this beautiful and relaxing Saturday, I took out the packet of glass noodle my sister-in-law got me from Thailand, some prawns and chicken from the freezer. Soon, the kitchen fills with the sound of knife chopping up vegetables and the sizzling of the noodle in the wok......mmm, another delicious lunch is served!




三丝炒冬粉

材料:
150克 冬粉,泡软,沥干
15克 黑木耳,泡软,切丝
30克 红萝卜,切丝
90克 芽菜
3支 青葱,切段 
80克 鸡肉,切块
80克 虾仁
1/2粒 大葱,切丝
1汤匙 蒜茸
2汤匙油

调味:
2汤匙 冬菇精
1茶匙 糖
1/2茶匙 盐
1/8茶匙 胡椒粉
200毫升 水

装饰:
适量辣椒丝和青葱丝

做法 :
1。 热锅,下油爆香蒜茸,加入鸡肉块翻炒1分钟,加入虾仁快炒均匀。将鸡肉块和虾仁铲起待用。2。 锅内保留余油,加入大葱炒至软,加入黑木耳和红萝卜炒匀,加入所有调味料盖锅盖,焖1分钟。
3。  加入冬粉,搅拌均匀,加入做法(1)的鸡肉和虾仁,炒匀,加入芽菜和青葱段,大火翻炒均匀,即可上碟,撒上适量的辣椒丝和青葱丝装饰即可。



Fried Glass Noodle with Julienned Vegetables
Ingredients:
150g glass noodles, soaked until soft and then drained
15g black fungus, soaked until soft and then julienned
30g carrot, julienned
90g bean sprouts
3 stalks spring onion, cut into short stalks 
80g chicken,cut into pieces
80g prawns
1/2 a bulb of onion, julienned
1tbsp chopped garlic
2tbsp oil

Seasoning:
2tbsp mushroom essence
1tsp sugar
1/2tsp salt
1/8tsp pepper
200ml water

Decorations:
Some julienned chilies and spring onions

Method:
1. Heat up the oil in a wok and saute the garlic until fragrant. Add in the chicken and saute another 1 minte before adding the prawns and sauteing evenly. Scoop the chicken and prawns onto a plate and put aside for later use.
2. Continue using the oil in the wok to saute the onions until soft. Add in the black fungus and carrots and saute evenly. Add in all the seasoning and cover the wok with the lid. Allow to simmer for a minute.
3. Add in the  glass noodles and stir-fry evenly. Add in the chicken and prawns from step (1) and fry evenly before adding in the bean sprouts and spring onions. Stir-fry evenly over a high flame before serving. Scatter some julienned chilies and spring onions on top as decoration.

This packet of glass noodle from Thailand is really springy and delicious after frying. Thanks to my sister-in-law for bringing this back from Thailand for me!

好吃又健康。
