娘惹薄饼(Nyonya Popiah)

 多少个周末的午餐,总喜欢选来这好吃又不腻的小吃。
不管是自家做的或是小贩中心的光顾,
都获得安家三口的青睐。 

This delicious and less oil  Nyonya Popiah is well loved by my family.   A common choice served at my house for lunch on weekends. 






喜欢甜而不腻的沙葛内馅,
喜欢爽口的生菜,青瓜丝,芽菜,
喜欢炸豆腐,烤香花生,煎香蛋丝在牙缝中的穿梭,
当然那偶尔嚼到脆香的炸葱头,更有画龙点睛之棒!
The sweet and less oil yam bean filling,
the crunchy julienned vegetables,
the fried toufu, the grilled peanuts, the julienned egg ,
even the aromatic fried shallots,
all serve to make this a tempting delicious and finger-licking good delicacy! 


如今通货膨胀,小小一条薄饼,
今非昔比,也卖到至少2令吉一条咯。
如果家庭成员多,还真的考虑自家做,划算些。
Nowadays, everything is expensive, a small roll of  Nyonya Popia can easily costs you RM2.00/pc. 
It will be more economical for those big family,
if you can homemade this Nyonya Popiah yourself.


娘惹薄饼(Nyonya Popiah)

沙葛内馅(yam bean filling)
1公斤沙葛(去皮,切丝)....................1kg yam bean ,julienned
300克绞肉 ..........................................300g minced meat
80克虾米,浸软剁碎 ..........................80g dried shrimp,soaked and chopped
40克蒜蓉  ...........................................40g chopped garlic
80克葱头仔蓉.....................................80g chopped shallot
3汤匙油...............................................3 tbsp oil

调味(seasoning)
2汤匙豆酱 .........................................2tbsp bean paste (dou jiue)
1小匙盐 .............................................1tsp salt
2汤匙糖 .............................................2tbsp sugar
1/2小匙味精 ......................................1/2tsp msg
200毫升水 ..........................................200ml water

做法:
1。热锅下油,炒香蒜茸,葱头仔蓉和剁碎虾米,接着下绞肉,中火慢炒至半熟 。此时加入一半的水和调味,翻炒均匀,煮滚。
2。加入沙葛丝,翻炒均匀,小火焖煮,偶尔搅拌,见干加水至沙葛熟透入味。(全程约30分钟) 

Method:
1. Heat up oil in a wok, saute the garlic, shallots and shrimps. Next, add in the minced meat, then saute over medium flame until half-cooked. Add in half the water and the seasoning, mix well then bring to a boil.
2.  Add in the yam bean strips, mix well. Cook it over a low flame, stirring occasionally. Add water when required and continue to cook until the yam bean is completely cooked.



配料(side dish)
1棵油麦,(剥叶).............................1 yao mak/chinese-lettuce
1条黄瓜(去皮和籽,切丝) ............1 cucumber,seedless and julienned
200克豆芽(去根,洗净后用热水烫熟)....200g bean sprout, removed the root,cleaned and blanched
2块炸豆干,切成小方块 ...........................2 fried tou fu,diced
3粒鸡蛋(煎成薄蛋饼,切丝)....................3 eggs omelette ,julienned
100克花生(烤香,搅碎)............................100g peanut toasted and blended
适量炸葱头 .................................................some deep fry crispy shallots


将准备好的配料分别盛入分类盘里。

 包卷材料(Rolling ingredients)
20片薄饼皮(菜市买得到)..................20 pieces popiah skin ( available at wet market)
一煲沙葛内馅 ......................................pot of yam bean filling
适量黑甜酱 ...........................................some sweet sauce
适量辣椒酱 ...........................................some chilli sauce

做法:
1。先把一片饼皮放在盘子上抹上甜酱和辣椒酱,放上一片生菜,一些豆芽和黄瓜丝和一整大匙的沙葛馅料。
2。最后点缀上其它配料并撒上花生和炸葱头,便能卷起,包裹成长卷。切段后便可享用。


 Method:-
1.Spread a little sweet sauce and chilli sauce onto a popiah skin.  Place a  piece of yao mak leaf on top, some bean sprout, some julienned cucumber and 1 tbsp of yam bean filling.
2. Add in some diced tofu , julienned omelette, fried shallot and toasted peanuts. Finally, roll it up and serve. Can be served whole or cut into pieces.

  2. I totally agree having popiah on weekend lunch sounds really great; and each individual can add their own filling and wrap themselves. Simple dish yet it can bring families closer in ties.

  8. 我也是有同感哦,现在外面买的popiah,吃一条由不过瘾,吃多两条又很心痛,还是自己在家动手好,可以吃到爽爽,嘻嘻。。

  10. 你说得对,外面卖很贵了,而且料又少。。。自家的,真的好料。但是在巴刹没看过卖popiah皮,要去找找看^_^

  20. I prefer this type of popiah than the fried one. Too bad I can't get the ready made fresh popiah skin here. Tried making it once but not successful.
