轻乳酪蛋糕(Light Cheese Cake)

看到Eileen家的轻乳酪蛋糕,
诱惑极了!
家里材料不缺,难得这份雅兴被催起,
于是,敲蛋,搅打奶油,开炉咯。
I was really attracted to Eileen's sharing of the Light Cheese Cake. At the same time, I had all the ingredients, so I thought, why not?

轻乳酪蛋糕(Light Cheese Cake)

材料:.............................Ingredients :
150克 奶油乳酪 ...........150g cream cheese
80克 牛奶 .....................80g milk
38克 无盐奶油..............38g unsalted butter
3个 蛋黄 .......................3 egg yolks
22克 低粉 .....................22g cake flour
15克 粟粉 .....................15g corn flour

3个 蛋白 .......................3 egg white
70克细砂糖 ..................70g castor sugar
1 茶匙柠檬汁 ...............1 tsp lemon juice


做法(Method)

1)将无盐奶油隔水溶化,低粉与粟粉混合过筛,备用。
1. Melted unsalted butter. Sifted the cake flour and corn flour.


2)奶油乳酪与牛奶隔水搅拌至无粒状。
2. Double-boil milk and cream cheese until dissolved. 


3)分三次把做法2)倒入溶化奶油里。
3. Pour the dissolved mixture(2) into the melted unsalted butter in 3 batches.
 

4)把蛋黄逐粒加入,快速搅拌。
4. Add in the eggs one at a time.  Beat with high speed.
 

5)将粉类倒入,混合均匀,置旁待用。
5. Add in cake flour and corn flour,mix well and put aside.


6)用搅拌机将蛋白打发,再把柠檬汁加入。
6. Whisk the egg white till fluffy, add in lemon juice.
 

7)分次把细砂糖倒入,拌打至湿性发泡即可。
7.  Add in the castor sugar in few batches,whisk until soft peak is formed.

8)取一部分的蛋白霜拌入乳酪面糊里,快速混拌。再倒回剩余的蛋白霜,搅拌均匀。
8.  Mix step (5) mixture with egg white mixture evenly .(apply chiffon cake mixing method).



9)倒入7寸圆型脱底模型里至8分满,放入预热烤箱,以150度,水浴法烤约70分钟。
9. Pour the batter into the 7"round  base removable pan. Put the pan into a larger pan half-filled with hot water. Bake with preheated oven at 150'C for 70 min or until baked.    


10)蛋糕出炉后,约5分钟,即可脱模。
10. Once baked,unmould the cake after 5 minute.



 简单的材料,容易的做法,
却带来一份动人的乳酪香醇。
叫人为之赞叹!

Simple ingredients with easy steps, yet it produces a wonderful Cheese Cake.
