流沙包(Chinese Molten Salted Egg Custard Steamed Buns)



接到同贴题单时,见到这道流沙包,
心里还真的慌了一会,
因为之前有闻其他姐妹分享,
都说成品是“不流流沙包”,
或“半流流沙包”.......
所以。。。。想要“一流流沙包”,
难免压力叻。。。。



这回流沙包初体验,
个人觉得应该算半流吧?
哈哈哈哈哈。。。。。你们说呢?


原食谱的流沙馅,用的是椰奶,
很不幸,做的时候,巧遇开斋节,
市场缺椰奶,我唯有以鲜奶取代,
幸好成品出来,依然美味可口,
父女俩异手同竖大拇指,
赞不绝口。。。。。



流沙包
食谱参考 :Qi Qi In The House
共做6个

奶黄流沙馅:
30克     咸蛋黄
35克     细砂糖
20克     蛋黄粉
30克     鲜奶
8克       粟米粉
40克     奶油

包皮 :
130克   普通面粉
15克     细砂糖
80克     鲜奶
8克       白油
1 茶匙   即溶酵母
1茶匙    泡打粉
少许盐

做法 :
1。 咸蛋黄蒸熟压成泥后,与其他流沙馅材料混合拌匀,蒸10分钟。
2。 将蒸熟的流沙馅以打蛋器搅匀,藏于冰箱冷冻定型。
3。 将包皮材料搓揉成光滑面团,休面松弛15分钟。
4。 分割为6份(约40克一份),滚圆。
5。 将小圆面团擀平,裹入少量流沙馅,封口捏紧。最后发酵30分钟。
6。 大火蒸4钟即可。







Chinese Molten Salted Egg Custard Steamed Buns
Recipe adapted from :Qi Qi In The House
Yield 6pcs

Salted Egg Custard Filling
30g    salted egg yolk
35g    caster sugar
20g    custard powder
30g    milk
8g      corn flour
40g    butter

Pao dough :
130g   plain flour
15g    caster sugar
80g    milk
8g      shortening 
1 tsp   instant yeast
1tsp    baking powder
Pinch of salt

Method:
1. Steam the salted egg yolk until cooked and mash it before mixing it evenly with the remaining salted egg custard filling ingredients. Steam the mxture for 10 minutes.
2. Beat the steamed filing from (1) evenly with an egg beater, then refrigerate to harden its shape.
3. Knead the pao ingredients into a smooth and shiny dough, then allow it to rest for 15 minutes.
4. Divide the dough into 6 equal portions (roughly 40g per portion) and roll them into balls.
5. Flatten the balls of dough and wrap in a portion of filling, sealing the dough firmly. Rest for a final 30 minutes.
6. Steam over a high flame for 4 minutes.








内馅充满咸蛋黄,奶香,
口感顺滑溜口,包体松软,
咬下去的时候,流沙馅会“吡”出来。。。。
那美味就是很妙,妙不可言!
难怪这流沙包在点心楼的点购率是蛮高的。


居于父女俩的热烈反应,
我想很快安家会第二度蒸流沙包了,
希望成品会更美好。
