木瓜虾汤 (Papaya Prawn Soup)

这是一道带有浓浓娘惹色彩的料理。
This  is a typical Nyonya cuisine . 



里边有娘惹菜肴常见的咸鱼骨,虾子,辛香料,
属于重口味的料理。
This dish is garnished with the typical Nyonya ingredients like salted fish bones, shrimps and spices.

木瓜里内含木瓜酵素,而青木瓜的木瓜酵素是成熟木瓜的二倍左右,
这些木瓜酵素不仅可分解蛋白质、糖类,
更可分解脂肪,通过分解脂肪可以去除赘肉,缩小肥大细胞,促进新陈代谢,
及时把多余脂肪排出体外,从而达到减肥的目的!

木瓜虾汤
食谱来自:安迪漾
材料:
青木瓜     400克,去皮去籽,切小块
虾            20只
虾米        1汤匙,泡软,捣烂
咸鱼骨    100克,洗净切块,煎香
胡椒粒    1茶匙,捣碎
水            21/2杯
油            2 汤匙

辛香料:
石古仔      2粒
巴拉煎粉  1/2 汤匙
小葱头      3粒
红辣椒      1条

调味料 :
盐和糖适量

做法 : 

1。 虾洗净,剥壳,去沙肠,用适量的盐捉洗,再以水冲净置冰箱待用。另外虾壳保留备用。
2。 将辛香料捣烂或用搅拌机搅烂。
3。 虾壳以水煮滚,慢火煲约10分钟,过滤成虾汤备用。
4。 热油,小火炒香虾米和辛香料。 加入咸鱼骨,胡椒碎,调味和虾汤,煮滚,加入青木瓜块,以中火煮至木瓜变软。
5。 最后加入虾只,煮约2-3 分钟即可。


Papaya Prawn Soup

Ingredients :
400g  green papaya, remove skin and seeds, cut into pieces
20      prawns
1tbsp dried shrimps, soak till soft and pound
100g  salted fish bones, rinse, cut into pieces and pan fry it till fragrant
1tsp white pepper corn, crushed
2 cups water
2 tbsp oil

Spices:
2 pieces candlenut
1/2 tbsp belacan powder
3 shallots
1 red chilli

Seasoning :
some salt and sugar

Method ;
1. Rinse prawns, remove shells and veins. Rub prawns with a little salt and rinse well with water, then keep in the fridge. Keep the prawn shells for later use. 

2. Pound or blend spices to form a paste.

3. Cook prawn shells with boiling water. Turn to low heat and simmer for 10 minutes. Strain and keep the stock.

4. Heat oil in a wok and saute dried shrimps and spice paste over low heat till fragrant. Add in salted fish bones, pepper corn, seasoning and the prawn stock. Bring it to a boil. Add in papaya pieces, turn to medium flame and cook till papaya becomes soft and tender.

5. Add in prawns and cook for another 2-3 minutes, and it's done.
