巧克力甜心面包 (Chocolate Sweetheart Bun)

又来玩造型面包。
今天玩的是对你爱。。。。。爱不完的心形。
Today I decided to bake buns with heart shape.




面包在烘焙时,突然想起今天刚巧是白色情人节呢?
这丑丑的心形面包,好像有点应景,
可是又有点不对,卖相太黑了吧? >@。@<
(谁叫安迪错用黑巧克力粉呢?)
While the buns were baking, it occurred to me that today was White Day, and these heart shaped buns were really suitable for the occasion. Yet aren't these buns a little too dark? Haha, my mistake for using dark chocolate powder.



白色情人节,又名返情人节,每年的3月14日。
该节日源于欧洲指的是在情人节收到礼物,
则在一个月后的3月14日回送礼物。

甜心巧克力面包 (Chocolate sweet Heart Bun)
食谱摘自跟爱和自由一起做面包(第67页)
可做10个面包(yield 10pcs)

材料:  Ingredients :
A 高粉200克  Bread flour 200g
    低筋粉50克  Cake flour 50g
    可可粉15克 Chocolate powder 15g
    奶粉12克 Milk powder 12g 
    细砂糖38克  Sugar 38g
    盐3克  Salt 3g
    蛋液38克 egg 38g  
    即溶酵母粉3克  Easy-bake yeast 3g
    水122克  Water 122g

B 无盐黄油25克  Unsalted butter 25g
      耐烤巧克力豆30克  Chocolate seeds 30g


表面装饰 :牛奶   Some milk for surface brushing.


做法:
1。  材料A 全部混合,先用慢速搅拌成团,再用中速搅成表面光滑,能拉出比较厚的膜。
2。  加入无盐奶油用慢速搅入,再用中速搅成可拉出稍透明薄膜的面团,加入耐烤焦克力豆搅匀。
3。  面团放入容器内并盖上保鲜膜,进行基本发酵约60分钟。

 4基本发酵好的面团排气并分割成50克/个,滚圆后盖上保鲜膜,松弛约15分钟.
5。 将松弛后的面团擀成椭圆形,翻面后压薄长底边,自上面下卷成橄榄形。
6。将面团略搓长,轻轻压扁,对折,尖角处错开一点儿,用刀从中间切开,但不要切刀尖角处。
7。长的尖角在上,将面团自切口处翻开成心形,排在烤盘上,进行最后发酵。
8。 最后发酵结束后,在面团表面刷上牛奶。
9。 放入已预热的烤箱中,以上下火180°C 烘烤约15分钟。



 Method :
1. Mix ingredients A into a dough using low speed, then use medium speed to knead it into a shiny and smooth texture.

2. Add in the unsalted butter, then knead it using medium speed until it forms dough that can be stretched into a translucent membrane then add in chocolate seed and mix well.

3. Proof the dough for about 60 minutes.

4. Divide dough into 10 equal balls with 50g each, then allow to proof for another 15 minutes.

5. Flatten the dough into a oval shape ,then try to roll it into olive shape .

6. Lightly flatten the Olive shape's dough,fold it up, use a knife to
cut 3/4 of the way.
7. Split the dough and flip it into a heart shape. Arrange it on the baking tray or heart shape mould to allow final proofing.
8. After the final proofing finished, brush the surface with milk.
9. Bake in a preheated oven at 180°C for 15minutes.

  6. Aunty Young, these buns reminds me that I haven't been baking buns of various shapes. So tempted to make some but must find time.. Lovely hearts, so sweet....
