好了,礼貌招呼完毕。
请大家吃个好吃的杯子蛋糕。
当这芝麻粉开封时,那股浓郁的芝麻香气,
沁心沁肺,叫人为之一振。
烘出来的蛋糕,更是香气四溢,弥漫整个厨房。
黑芝麻杯子蛋糕
共做24杯
材料 :
面糊
蛋黄 6个
盐 1/8 茶匙
鲜奶 70克
粟米油 50克
黑芝麻粉 30克
低筋面粉 80克
蛋白 6个
柠檬汁 1茶匙
细砂糖 100克
黑芝麻奶油装饰:
奶油 150克细砂糖 80克
鲜奶 50克
黑芝麻粉 25克
做法:
1) 蛋黄+盐搅拌均匀。加入粟米油+鲜奶
2) 筛入低筋面粉搅拌成均匀面糊。
3) 蛋白和柠檬汁稍微打发,分次加入细砂糖打至湿性发泡。 (过程大约2分钟)
4) 把蛋白霜分次加入蛋黄面糊里用刮刀轻轻搅拌均匀。
5) 再倒入纸杯里,轻轻把空气敲出。
6) 烤箱预热180度,烘烤大约20分钟。烤好杯子蛋糕置放凉架待冷备用。
7) 黑芝麻奶油装饰: 将奶油和细砂糖打至松发,徐徐地加入鲜奶拌至顺滑,最后加入芝麻粉拌匀即成黑芝麻奶油了。盛入挤花袋。

6 Egg Yolks
Pinch of Salt
50g Corn Oil
70g Milk
30g Black Sesame Powder
80g Cake Flour(Low Gluten Flour), sifted
6Egg Whites
100g Caster Sugar
1 tsp lemon juice
Black Sesame Cream Topping :150g Butter
80g Caster sugar
50g Milk
25g BlackSesame Powder
Method:
1. Preheat oven to 180'C.
2. Beat egg yolks and salt with a hand whisk until slightly pale. Add corn oil and milk Stir well on each addition.
3. Add cake flour and black sesame powder in 3 separate rounds. Use a spatula to mix until smooth and no lumps.
4. Beat egg whites until frothy. Add sugar in 3 separate rounds and beat until just under stiff peaks and glossy-looked. It is ready when you turn the bowl upside down, the egg whites should stay without falling.
5. Give a gentle stir to the egg yolk mixture. Fold 1/3 of egg whites into the yolk mixture. Then, pour it into the rest of the egg whites. Fold until just combined.
6. Pour the batter into the cupcake liner, lift & drop the liner gently to remove air bubbles.
7. Bake at lower middle level for 20 minutes or until a cake tester comes out clean.
8. Black Sesame Cream Topping : Cream the butter and sugar. Slowly add in milk and well combine . Lastly add in black sesame powder, mix well. Scoop the black sesame cream into piping bag. Pipe the cream on the top when the cup cake is completely cooled.
