柠檬费南雪(Lemon Friands)

 When I first saw these cute and unique friands at Ann's, I immediately included them into my to-do list. With the Christmas mood in full swing, and my friend coincidentally passing me a friands mould, who am I to resist the calling to bake these adorable treats?

Even though the patterns on this batch of friands aren't too clear, but the tastiness sure makes up for it! It's not too sweet with a delicious lemony taste, while the texture is moist and soft. Pop a bite-sized Lemon Friand into your mouth and you'll fall in love with it too!

Just for the fun of it, I decided to add 1/8tsp cocoa powder to 1/3 of the batter, and ta-dah! Chocolate Lemon Friands!

     95克 牛油
     60克 底筋面粉
     75克 糖粉
     60克 杏仁粉
     3个 蛋白 (约105克)
     1粒 柠檬屑
1。 烤箱预热致180度。把friand模涂上少许牛油方便脱模。(没有friand模也可以用满分模代替)。
2。 将低筋面粉和糖粉过筛在大碗里,加入柠檬屑,杏仁粉搅匀。
3。 把蛋白稍微打致起泡。把蛋白和牛油倒入干粉里,拌匀。
4。 把面糊倒入模内。送入烤箱烤约20分钟致有点金黄色。 从烤箱取出后,蛋糕先留在烤模中,待5分钟后才放到网架待凉。洒上糖粉做装饰。

95g Butter
60g Plain flour
70g Icing sugar
60g Almond meal (ground almond)
3 Egg whites (105g) Grated zest of 1 lemon

1.  Preheat oven to 180C. Melt butter and use a little to grease 20 holes mini friand pan. 12 holes for bigger friand pan.
2.  Sift the flour and icing sugar into a large bowl, then stir in the lemon zest and almond meal.
3.  Place egg whites in a small bowl and lightly froth with a fork. Add to dry ingredients with melted butter, stirring until completely combined.
4.  Fill each friand hole two-thirds full/ Bake for about 20 minutes until golden. Remove from the oven, leave in the pan for 5 minutes, then turn out onto a wire rack to cool completely. Dust with icing sugar before serving.

Two types of friands, each with their own unique tastes. My family loves it, so since they are rather easy to make, these friands will definitely appear more often at home.
