桂圆杯子蛋糕 (Dried Longan Cupcake)



还是努力的往待做清单中,找食谱。
找来了Irene大力推荐的桂园杯子蛋糕。
Still hard at work looking for somewhat "old" famous recipes, I stumbled upon this highly recommended Dried Longan Cupcake at Irene's blog.





稍微资深的博客,应该都已经做过这个众人都认同的好吃杯子蛋糕。
所以今天我做这蛋糕了,那就是资深了,
哈。。。。哈。。。。
偶尔自欺欺人一回,无伤大雅,你们也一齐笑笑没烦恼吧!

这蛋糕对安迪来说,有点甜。
可是好甜的安哥,可喜欢得很,简直就赞不绝口!
I felt that this cake was a little sweet, but for my hubby, who has a sweet tooth, it is perfect!


蛋糕内馅为鲜甜的桂圆丝,
加上蛋糕面上富嚼劲又香脆的核桃碎,
蛋糕吃起来就口感丰富极了,当然Hociak!
With the sweet dried longans and crunchy walnuts, this cupcake is marvelous!



桂圆杯子蛋糕
原食谱参考:最爱的。。。

材料:(7个纸杯)
桂圆肉(龙眼干)85克
鸡蛋 1个 

细砂糖 50克 
沙拉油50克(我用溶化奶油30克)
Yakult酸奶 100克
低筋面粉 85克

发粉  ¼茶匙
苏打粉 ¼茶匙
核桃(适量)


做法
1)现将桂圆肉剪成丝。然后用酸奶浸泡1个小时后才使用。

 浸泡后,将桂圆肉捞起虑干,将60克的酸奶留下备用。
2)鸡蛋和细砂糖用打蛋器搅拌均匀后加入 沙拉油和60克的酸奶一起搅拌均匀。
3)筛入粉类拌匀。然后加入桂圆干,改用橡皮刮刀轻轻搅拌均匀成面糊。
4)将面糊倒入纸杯内至8分满。在放上适量的核桃。
5)烤箱预热后,于165度烘烤大约25分钟左右至蛋糕变金褐色便可。


Dried Longan Cupcake
Recipe adaptrd from : Irene 

Ingredients :
85g dried longan
1 egg
50g castor sugar
50g  salad oil ( I used 30g melted butter)
100g Yakult
85g cake flour
1/4 tsp baking powder
1/4 tsp baking soda
some crushed walnuts


Method:
1)Cut the dried longan into strips and soak in Yakult for 1 hour. Drain the dried longan and keep about 60g of Yakult for later use.
2)Beat the eggs and castor sugar till even, then add in salad oil and the 60g Yakult. Mix well.
3)Sieve in all the powder and flour. Add in the dried longans, then mix the batter evenly with a spatula.
4)Spoon the batter into paper cups until about 80% full, then add some crushed walnuts on top.
5)Bake in a preheated oven at 165
°C for 25 minutes or until golden brown.

    这个蛋糕真的好好吃。如果你用到在药店买到的黑色龙眼干来做,这个效果更不一样了。很香。

  5. Hi Aunty Young! If we can put dried cranberries or raisins in cupcakes, why not dried longan hor? Your cupcake liner is very pretty!

    刚刚买来黑色桂圆,真的如娘子说的,甜很多哦,不过价钱也贵了一半。。。哈哈

  9. Hi Aunty Young, I have seen this cupcake several times but I haven't jump into the bandwagon yet. Your cupcake has lots of 'liao'. I like munching at the walnuts.
