古早味巧克力奶油芝士蛋糕 (Taiwanese Chocolate Cream cheese Sponge Cake)

有故事的可可粉,开封第一烤,
烤出这道蛋糕体松,软,嫩,
巧克力香气浓郁,
甜度适中,
一款吃了,感觉幸福洋溢的蛋糕!










古早味巧克力奶油芝士蛋糕

模具:7寸方形脱底烤盘

食谱参考 :这里
材料:

A
蛋黃 7
植物油 88 g 
可可粉 30 g
低筋面粉 75 g
奶油芝士 70 g

B
蛋白 7
砂糖 88 g
盐 1 g

做法:
1。将奶油芝士隔滚水方式,溶化,置旁待用。

2。将玉米油放入微波炉加热约30秒 ~ 1 分钟。将可可粉和低筋面粉筛过,加入热玉米油里,搅拌至无颗粒。

3。加入溶化奶油芝士和蛋黄搅拌成顺滑的蛋黄糊。

4。蛋白加入盐,慢慢加入砂糖打至湿性发泡的蛋白霜。

5。加入1/3的蛋白霜入蛋黄面糊里搅拌均勻。

6。 把搅拌好的蛋糕糊倒入剩下的蛋白霜中快速拌匀。

7。 将蛋糕糊倒入烤盘,轻轻震模几下,将蛋糕糊里的气泡给震掉。

8。水浴法先以170°C烤10分钟,再降至150°C继续烤40分钟即可。



将可可粉和低筋面粉筛过,加入热玉米油里,搅拌至无颗粒。

加入溶化奶油芝士和蛋黄搅拌成顺滑的蛋黄糊
Add in the melted cream cheese and egg yolk and mix evenly into a smooth batter.

Ingredients :


A

Egg yolk          7
Corn oil           88 g
Cocoa powder 30 g
Cake flour       75 g
Cream cheese  70 g


B

Egg white   7
Caster sugar   88 g
Salt   1 g

Method :

1.  Meal the cream cheese with double boil method.

2.  Heat up the corn oil in a microwave for about 30 seconds ~ 1 minute. Sieve the Cocoa powder and cake flour into the hot corn oil and mix evenly to avoid clumps of flour.

3.  Add in the melted cream cheese and egg yolk and mix evenly into a smooth batter.


4.  In another mixing bowl, add in egg white and salt, then gradually add in sugar while beating until soft peaks form (this is the meringue).


5.  Scoop 1/3 of the meringue into egg yolk mixture, mix evenly.


6.  Pour the batter from (step 5) into the remaining meringue, gently mix well.


7.  Pour the batter into the pan and tap the pan lightly on a tabletop to get rid of bubbles in the batter.


7.  Using steam bath method, bake with a preheated oven at 170°C for 10 minutes then turn down to 150°C for another 40 minutes.
