就因为这句推荐句,
我把用来煲汤,剩余的另一半冬瓜,
拿来试煮这道佳肴了。
这是和昨天那道冬瓜薏米排骨汤同一天烹调的。
为了一次过,消掉整粒冬瓜,
网上觅食谱。。。。
结果。。。
焖煮出来的红烧冬瓜,
口感还真的有像肥肉哦。。。。
意外惊喜!
香甜的酱汁和软儒的冬瓜,
还蛮下饭的!

红烧冬瓜
供3人份
材料:
冬瓜 500克
白糖 20克
高汤/清水 1杯
调味 :
生抽 1/2茶匙
老抽 1 汤匙
蚝油 1 汤匙
鸡精粉 1/4 茶匙
做法 :
1。冬瓜去皮去瓤,表面轻轻打花刀(或以叉子插洞),然后切成方块。
2。热锅下油,油热后下入冬瓜块煎至四面略显金黄后,把冬瓜扒到锅边,中间下少许白糖炒出糖上色后和冬瓜块一起炒匀。
3。再加入调味让冬瓜均匀上色。
4。倒入高汤/清水,炒匀后盖上锅盖,中火焖煮至冬瓜熟软(约5分钟。)
5。最后试味,加入适量的盐拌匀,大火收汁,起锅撒上葱花即可
小贴士
~ .冬瓜表面插洞,使之更易入味。
~. 炒糖的时候一定要注意千万别炒糊了。
Braised Winter melon with Oyster sauce
For 3 pax
Ingredients :
Winter melon 500g
Sugar 20g
Stock/water 1 cup
Seasoning :
Soya sauce 1/2tsp
Dark soya sauce 1 Tbsp
Oyster sauce 1 Tbsp
Chicken stock powder 1/4 tsp
Method :
1. Remove the winter melon skin
and seeds, lightly score the surface with a knife,cut into pieces.
2. Heat up oil in a wok, fry the winter melon pieces till golden color. Move the fried melon pieces to the side of the wok. Pour in the sugar ,saute it into brown liquid and saute - fry with melon pieces evenly.
3. Add in seasoning ,saute until the melon pieces is brown color coated.
4. Pour in stock/water,stir well and cover it . Simmer with medium flame till the melon is cooked.(about 5 minutes)
5. Lastly add in salt to desire taste, turn up flame to thicken the gravy. Remove from the flame and scatter some spring onion on top and serve with bowl of piping hot rice.
Tips :
~ Scoring the melon surface is help to absorb the gravy.
~ Carefully saute the sugar to prevent burning.

其实去皮去核,所剩无几。。。加上宴客,自然就比平时的量大了。
删除所以可以一次过消灭它。
