2018年饼 ~ 咸蛋黄奶油酥饼(Salted Egg Yolk Cookies)



今天已经是 1月16 日了,
下个月的今天将是大年初一,
换句话说,距离农历新年的到来,
就只剩下整整1 个月的时间咯!



网上看到许多网友老早就开始烘烤年饼了,
今天终于收拾懒洋洋的心情,
开始为迎接狗狗年,而开炉咯。。。。


第一炮选来近年很流行的咸蛋黄奶油酥。
还好,一切顺利,
饼干酥香美味,难怪获得不少人的青睐,
网上每天都见网友门在分享呢。







咸蛋黄奶油酥饼
食谱参考 : No Frills Recipe
共做70粒

材料:

180 克 无盐奶油,温室软化
  80 克 细砂糖
    4个  咸蛋黄, 蒸约5 分钟,趁热捣烂成泥状
250克   面粉
25 克    玉米粉
1/4 茶匙 发粉
1个蛋黄,稍微打散刷面用
少许的盐
适量的黑白芝麻,撒面用
  

做法: 
1。 将所有的粉类筛过,置旁待用。
2。 将软化奶油打至顺滑,加入细纱糖和盐,继续搅打至乳霜状。
3。  加入筛过粉类和泥状咸蛋黄,拌匀。
4。  用刮刀以切拌式混合均匀成软面团。
5。  将面团以保险纸包好,冷藏于冰箱约30分钟或更久。
6。  面团上下包上保险纸,再已杆面棍将面团杆成5mm的厚度,然后以曲奇模切,切出喜爱的曲奇形状。
7。  表面刷上一层蛋黄液并撒上一些黑,白芝麻。
8。   送入预热烤箱180'C 烤约12 - 15 分钟或呈金黄色即可。







Salted Egg Yolk Cookies
Recipe adapted from : No Frills Recipe
Yield : 70 cookies
Ingredients
180 gm butter,room temperature
80 gm caster sugar
4 salted egg yolks, steamed for 5 mins and mashed while still hot
250 gm plain flour
25 gm cornflour
1/4 tsp baking powder
1 egg yolk, lightly beaten
a pinch of salt
Sesame seeds to sprinkle

Method
1.  Sift the flour, cornflour and baking powder
2.  Cream butter, sugar and pinch of salt till light and fluffy
3.  Fold in the sifted flour and add in the mashed egg yolks.
4.  Using a spatula, gather the crumbs to form a soft dough.
5.  Wrap with cling wrap and chill in the fridge for about 30 mins. or more.
6.  In between 2 sheets of plastic, roll out dough to 5 mm thick and cut out the cookies with cookie cutters.
7.  Brush the cookies with egg yolk wash and sprinkle on some sesame seeds.
8.  Bake cookies in a preheated oven  180' C, for about 12 to 15 mins or  till golden brown in color.

  1. Hi Aunty Young, I have bookmarked this recipe to do for this CNY but not sure if I will have the time to bake them. Have been busy caring for my MIL who has been in hospital since end December. Hope she can be discharged soon. These cookies looks so good and I love the shape you made them.
