迷你玫瑰苹果塔(Mini Apple Rose Tart )



当我在Peng's Kitchen  看到这高贵优雅的玫瑰苹果塔时,
就深深得被打动,一心就想把它变出来。
今天是9月份的最后一天,希望这漂亮的苹果塔,
来得及乘上“小拇指”最后一班列车。
 When I saw this gorgeous Apple Rose Tart at Peng's Kitchen, I fell in love with it and made up my mind to make a batch of it.




 美美的玫瑰苹果塔,再来一杯香香的红茶,
看看外面细雨飘飘,凉风习习,
原来快乐就是这般简单。
A beautiful Mini Apple Rose Tart, accompanied by a cup of calming red tea, against a backdrop of drizzling rain...... Mmm......bliss!


塔皮富有奶油香气,苹果片香郁美味,
无论视觉或味蕾,绝对不叫你失望:)
The sweet taste of fresh apples mingles with the creamy taste of the tart, giving this tart a taste as good as its appearance!

迷你玫瑰苹果塔
食谱参考: Peng's Kitchen
(可做6个)

塔皮材料:
面粉 100克
黄糖 1/2汤匙
盐 1/8 茶匙
冷化无盐奶油 80克,切成小方块
冰水 2汤匙

做法:
1。 在一个碗内,将面粉,黄糖和盐混合均匀。
2。 加入方块奶油,用朔胶刮刀刮拌成粗状面团。
3。 加入冰水,搓拌成顺滑面团,用保鲜纸包好,放到冰箱冷藏1小时。
3。 将面团分成分成6份,每份约35克。 将份面团搓圆压扁,铺到一个已经涂上油的满分模子里,用手指压成一个凹入的满分形。 

内馅材料;

红苹果 3个
黄糖 30克
奶油 30克
柠檬汁 2汤匙
草莓果酱 一些

做法 :
1。 溶化奶油并和黄糖拌匀待用。
2。 苹果去籽,用刨到刨成半月形薄片,淋上柠檬汁拌匀,再淋上做法(1)的糖浆。 放到微波炉,高温煮2分钟或至苹果片软化。
3。 玫瑰花瓣: 将8- 10 片的苹果片交叠排在工作台上,从一端慢慢卷成玫瑰花瓣,再慢慢加复苹果片至到成一朵好看的玫瑰花,然后小心的移入塔内。
4。 将完成的玫瑰苹果塔放入已预热180‘C的烤箱里,烤30分钟或塔皮呈金黄色即可。
5。 最后烤好的玫瑰苹果塔,涂上草莓果酱做装饰即可。





Mini Apple Rose Tart
Recipe adapted from :Peng's Kitchen
(yeild 6 tarts)


Pie Dough Ingredient
  • 100gm plain flour
  • 1/2 tbsp brown sugar 
  • 1/8tsp salt
  • 80gm unsalted butter, cubed and chilled
  • 2 tbsp icy cold water
Method

1. Combine flour, sugar and salt in a mixing bowl.
2. Add in cubed butter, using a pastry cutter, work in the butter into the flour until mixture looks like a coarse meal.
3. Add in water and stir to combine. Lightly fold into a soft dough, cling wrap and chill for at least 1 hour. (while chilling the dough, I proceed in making the filling)
4. Divide dough into 35gm each. Roll into a ball. On a floured surface, lightly roll out into a round disc. Place it into a greased muffin tin, pushing the dough up to the sides evenly.


Filling
3 red apples
30gm brown sugar
30gm butter
2 tbsp lemon juice 

strawberry jam

Method
1. Cut apples and discard the cord. Using a mandolin, cut the apple thinly into half moons. Toss the apples with the lemon juice. Dissolve the butter and combine with the brown sugar. Pour the mixture over the apples and mix evenly.
2. Microwave apples for about 2 mins until soft and pliable to roll.
3. To form the roses, place about 8-10 slices of apples on a flat surface, laying them horizontally with the skin side facing you. Place each slice so it overlaps the previous slice by half. Tightly roll the apples from one end to the other. Carefully pick up the apple rose and add additional apple slices around the outside, depending on the size of the rose you preferred. 
4. Bake in preheated oven at 180°C for 30 mins until crust is golden.
5. Brush  the strawberry jam over each rose apple to glaze.
