玻璃曲奇(Stained Glass Cookies)


 当第一次看到这喜气洋洋的玻璃曲奇时,
就决定要在充满圣诞气息浓厚的十二月,让它出现在我家 。
When I first saw these beautiful cookies, I made up my mind to bake them as Christmas cookies.




 今天正是12月1日,我迫不及待,
让它为来着的圣诞暖暖身,希望借着它卡娃依的外貌,
亮丽起我迎圣诞的美好心情!
Since it's the first day of December, I decided to just get on with them. Don't their cuteness just bring a festive cheer to your day?





 系起了红线,现挂在圣诞树中,
感觉如何?  
是不是开始有圣诞feel了? 哈。。。。哈。。。。
Hung on the Christmas tree with red string, they really get the Christmas mood going, don't they?


玻璃曲奇
可做约35 - 40个
食谱参考:Nasi Lemak Lover

奶油100,置室溶化
细砂糖55克
柠檬汁1茶匙低筋粉162克
玉米粉12克
 苏打粉1/4茶匙



水果彩色糖果 (FOX 或 BON BON 牌子),剁碎

做法:
1。 将低筋粉,玉米粉和苏打粉筛过置旁待用。
2。 将奶油和细砂糖搅打至松软。
3。 加入柠檬汁和所有粉类,搅拌均匀。
4。 用擀面棍将面团擀成约4mm的薄面团,将之藏于冰箱30分钟。(硬化后的面团较好操作)
5。 用曲奇模子模出喜爱的形状,然后移至铺上油纸的烤盘。
6。 此时用较小的曲奇模子或利刀在曲奇的中间割出一个空间。(此空间是保留待会要填上水果彩色糖果的)
7。 如果曲奇打算现挂在圣诞树,那就得在曲奇的上端钻一个小洞,然后才送进烤箱烘焙。
8。将曲奇放入已预热150‘C的烤箱。烤10分钟,然后取出烤盘。
9。 将剁碎水果糖小心排放在半熟的曲奇中间。(过多的水果糖量,会导致曲奇受染色)
10。 继续烘烤约7- 8分钟,水果糖将会溶化和滚泡
11。 取出烤盘,置架子上,待曲奇完全冷切,才可以收进真空瓶子。


 用擀面棍将面团擀成约4mm的薄面团,将之藏于冰箱30分钟。
(硬化后的面团较好操作) Use a rolling pin, roll the dough to a thin sheet (~4mm), 
keep in the fridge (30mins) to harden for easy handling.


Stained Glass Cookies
 *makes about 35 - 40pcs (depend on the size of cutter)
Recipe adapted from Nasi Lemak Lover

100g unsalted butter, room temp
55g caster sugar
1tsp lemon juices
162g cake flour
12g corn flour
1/4tsp baking soda
Fruity candy (FOX or BON BON brands)cut into pieces

Method
1.  Sift cake flour, corn flour and baking soda, set aside.
2.  Beat butter and sugar till light and fluffy.
3.  Add in lemon juices and flour mixture, mix well.
4.  Use a rolling pin, roll the dough to a thin sheet (~4mm), keep in the fridge (30mins) to harden for easy handling.
5.  Use cookie cutters to cut dough into desired shapes. Transfer cookies to prepared baking sheets.
6.  Using a smaller cookie cutter or a knife, cut shapes into centers of cookies, reserving these center bits to add into extra dough.
7.  If cookies will be hung as ornaments or decorations, poke a small hole in the top of each cookie before baking.
8.  Bake at pre-heated oven at 150C for 10mins. Remove the tray from the oven.
9.  Cut candy to ½ or 1/3, place it into the hollowed-out centers of the half baked cookies, try to keep the candy within the centers. Any candy specks that fall on the cookie will color the cookie.
10. Continue to bake for another 7-8mins, the candy should be melted and bubbling.
11.  Remove baking tray from oven and place on wire racks to cool. When cookies are completely cooled, remove and store in an airtight container. String with ribbon if you want to hang as an ornament.
